Bok choy is a versatile member of the cabbage family. It’s delicious in stir-fries, soups and salads and just one cup of bok choy provides more than 100% of the recommended allowance of vitamin A and almost two-thirds of vitamin C! Bok choy is also a perfect vegetable to extend the gardening season!

Since bok choy is a cool-season crop, it can be planted in late summer after spring planted vegetables have been harvested and thrives in cold weather. Be sure to separate and wash the leaves thoroughly before cooking and use fresh bok choy within 6 days after harvest.
This delicious vegetable would make an excellent addition to any garden!

Habanero peppers are a type of chili that is typically associated with daring competitors all hoping to stand the heat. Although it’s not the hottest pepper on the planet, its Scoville heat units range 100,000-350,000…a huge leap from a jalapeno pepper with a Scoville range of 2,500-8,000.

Despite their heat, habanero peppers offer some surprising health benefits! Habanero peppers contain a chemical compound called capsaicin that studies have shown to reduce bad cholesterol, lower blood pressure and inhibit the growth of cancer cells. So, get those habaneros growing and add some spice to the dinner plate and years to life!

Research shows that we are more likely to eat vegetables if we have easy access to them. At Garden in a Box, we believe the best access are vegetables on our balconies, patios, rooftops, or even inside. The shorter the distance to the organic food, the better!

While most farmers start their plants from seed, we thought we would share a neat tip to expedite growing lettuce. Lettuce can regrow from it’s stem and is an ideal example of what could be garbage or compost but can actually grow into more food.

1. Buy a head of lettuce.
2. Cut off the base and place in water.
3. When rooting begins, plant! (We recommend using a Wonder Raised Bed.)
In a couple of weeks, new leaves will grow and be ready to harvest for the next salad or veggie burger topping.

Rosemary can easily be the MVH (Get it? – Most Valuable Herb) of any garden!

It not only pairs well with numerous meats and vegetables, including: chicken, fish and potatoes but it’s even used as a natural healer. Rosemary is used for digestion problems, including heartburn, liver and gallbladder complaints. Rosemary is especially powerful against bacterial infections. Everyone should definitely want this special herb in the garden!

Tip: Plant rosemary in the spring after the last frost and space each plant 2-3 feet apart in an area with plenty of sunlight. Since rosemary can grow between 3 and 5 feet, be sure to account for its eventual height wherever it is planted.

We like to say purchasing a Garden in a Box kit is like packing an entire garden in a box and shipping it directly to the doorstep! That’s because our kits come with everything to get started, including organic growing media.

In our kits is a 10-pound (yes, 10 lbs!) brick of coconut coir, an organic growing media made of finely ground coconut husk and inner shell. This is an excellent growing media because coconut coir retains water and provides natural aeration. When ready to start growing, soak the coconut coir brick in water and watch as it expands 5 to 7 times the volume of the brick!

We want everyone’s garden to be a success, so we added perlite for improved aeration and organic fertilizer for additional nutrients.

Fennel is a member of the carrot family that never seems to get the spotlight, but it is deserving of fame nonetheless! Unlike carrots, fennel grows above the ground and the entire plant is edible (although most recipes call for just the bulb). Fennel can be eaten raw, sautéed, roasted, or even added to soups and sauces! Just like many vegetables, fennel can be used in multiple ways and it provides great health benefits too! We’d say that’s not a bad ROI! 😉

Fennel pairs well with pork, chicken, sausage and even lamb and can be used as an aromatic garnish for salads, soups, pasta and more! Packed with fiber, fennel isn’t just a good food, its good for US – as it can reduce cholesterol and help prevent heart disease!

Be sure to plant fennel in the spring in a raised garden bed with at least 6 hours of sunlight and well irrigated soil. Looking for a raised garden? While our kits include an organic seed collection, vegetables and herbs do make their own seeds. Watch out for them when the plants begin to mature! Collecting these seeds can turn 1 plant into 2, 3, 4, 5…

Let’s use one of the most popular vegetable plants in today’s garden: the tomato. Tomatoes grown in our gardens are more juicy, flavorful, and brightly colored than the grocery store varieties. Plus, they are filled with seeds! Before using the entire tomato in a salad or pasta sauce, pick out several seeds, push them into our Seeding Kit Planter, cover with a little of the soil, and watch for the seeds to sprout!

Cabbage is the hero of a refreshing coleslaw. It brings a satisfying crunch, serves as a palate cleanser and provides loads of benefits our body will thank us for; including lowering cholesterol and improving digestion! Cabbage is closely related to broccoli, Brussels sprouts, and cauliflower and comes in four main types: Green (which is the most common), red, Savoy and napa. The best time to plant cabbage is before the last frost in the spring and is ready for harvest between 80 – 180 days.⁠
