What's the difference between Japanese and German knives?
Japanese steel is harder than German steel, which actually makes it easier to chip. German steel, which we use in our Wölfe blades, is less brittle and therefore easier to sharpen.
In all our knives, we use a premium carbon-alloy German steel called X50CrMoV15, which we selected for its excellent edge retention and sufficient hardness, preventing brittleness and chips for those utilizing their knives on a daily basis.
