Here’s a great suggestion for your apple pies this holiday season! 🥧 Precooking the apples also helps prevent overcooking the crust in order to fully cook the apples!

I’m all things apple this time of year - 🙅🏼‍♀️ pumpkin for me! Do you team apple or pumpkin?

Precooking the apples allowed us to cram twice as many apples in our Deep-Dish Apple Pie recipe than in our standard pie. Recipe here: https://cooks.io/3tRhXIV

Who loves a perfectly cooked steak?! 🙋🏼‍♀️
Here’s your secret ‼️sous vide‼️
What’s that? It’s a method of cooking in water.
Don’t have a sous vide? Not to worry, the one I have is in the link below! Perfectly cooked throughout! Here’s how I do it:
1. Season the steaks with ground pepper, salt, and rosemary.
2. Place steaks into a vacuum seal bag with 1 pat of butter (about a tablespoon) per steak. Vacuums seal those bad boys up.
3. Place into the water heated at 133°F for the perfect medium steak! You’ll cook for 30 minutes per 1/2 thickness of the steak. I usually cook for 1 hour! The meat is good in the water for up to 3 hours.
4. Once done cooking in the sous vide, remove from the bag, and pat dry. This is essential for a good sear.
5. Heat a cast iron skillet to hot. Once heated, put 1-2 Tbs of butter in the pan. Once melted, add the steaks. Sear for 30 seconds each side. If the steaks don’t sizzle when added, the pan isn’t hot enough.
6. Serve immediately, and enjoy! Don’t forget to top with the steak butter 😉
✨Seriously perfect every single time!!✨
The sous vide method is a bit of an investment, but it’s well worth it! This was the first valentines gift my husband and I got for each other once we were married! We’re still using it 5 years later! 🥳

We also purchased a water bucket with lid and insulated sleeve, vacuum sealer, and bags.

As promised‼️Seasoned [slightly] Buttered Rice 🍚
This rice is the most perfect basic side. It pairs well with so many things! I’ll call it a well rounded rice 😉 I served this with the chicken piccata recipe I shared yesterday! Here’s what you need:
- 1 c white rice (I don’t have a brown rice conversion because I don’t care for brown rice, and white rice has basically the same nutrition facts 🙃 white rice for the win! 🥳)
- 2 c chicken broth
- 3/4 tsp parsley
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp thyme
- 1-1 1/2 Tbs butter
- salt and pepper to taste

1. Mix everything together except the butter, salt, and pepper.
2. Cook the rice however you normally cook rice. I prefer and highly recommend the Pampered Chef Microwavable Rice Cooker. Link below! It’s SO easy to use, and the rice comes out perfect every. single. time! Throw everything in, give a quick stir, microwave as normal for 5 minutes, then microwave at 50% power for 15 minutes.
3. Once the rice is cooked, fluff it up and stir in the butter.
4. Season with salt and pepper to taste.
5. Serve and enjoy with your main dish.

I really love this because everything goes in one bowl (less dirty dishes 🙌🏻), and it requires very little attention while cooking, which is just fabulous! Cook it tonight, and let me know what you think in the comments below! ⬇️⬇️

Chicken Piccata 😋 aka caper chicken at our house! So delicious and full of flavor! Here’s what you need:
- 3-4 chicken breasts
- 2-3 Tbs olive oil
- Salt
- Pepper
- Garlic powder
- 1/2 c white wine
- 1/4 c butter
- 2 Tbs lemon juice
- 3-4 Tbs capers

1. Prep the chicken. Trim the fat, and generously season with salt, pepper, and garlic powder.
2. Heat oil in a large skillet over medium-low heat. I’m usually in the 3-4 range.
3. Cook the chicken until the internal temperature reaches 160°F-165°F. Once done, remove from the skillet. I usually remove the chicken from the heat at 160°F and let rest to prevent over cooking. No one likes dry chicken!
4. In the same pan, add the butter, white wine, lemon juice, and capers. Scrap all the brown bits from the pan - this adds great flavor! Don’t skip this! Then let simmer for 5-10 minutes. I slightly press the capers during the simmer. Not sure why I do this, but I do. 🙃
5. Serve the sauce with capers over the chicken, and dig in!
Notes: yes, usually you dredge the chicken in flour. I just don’t like this, so I don’t do it. I almost always skip the dredging in every recipe. If you like it, my all means, dredge alway! 👍🏻
This pairs well with broccoli, asparagus, orrrr Seasoned Buttered Rice 😉 Stay tuned for tomorrow’s recipe!
