4 large baking potatoes
1 lb ground beef (or lamb for traditional shepherd's pie)
1 cup frozen peas and carrots
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp Worcestershire sauce
1 tsp dried thyme
Salt and pepper to taste
2 cups mashed potatoes (buttery)
1 cup shredded cheddar cheese
2 tbsp butter
1 tbsp olive oil
Fresh parsley for garnish

Directions:

Preheat oven to 375°F (190°C).
Scrub the potatoes, pierce with a fork, and bake for 45–60 minutes until tender.
While potatoes bake, heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant.
Add ground beef and cook until browned. Drain excess fat.

* 2 tbsp olive oil
* 1 large onion, diced
* 3 cloves garlic, minced
* 2 cups beef broth
* 1 cup red wine
* 2 tbsp tomato paste
* 2 tsp Worcestershire sauce
* 2 sprigs fresh thyme
* 2 sprigs fresh rosemary
* 2 bay leaves
* Optional: 1–2 tsp crushed red pepper flakes (for extra heat)

**Directions:**

1. Preheat oven to 325°F (165°C).
2. Season the short ribs generously with salt and pepper.
3. Heat olive oil in a large ovenproof pot over medium-high heat. Brown the ribs on all sides, about 3–4 minutes per side. Remove and set aside.
