I have checked in on the micro greens simple salad mix. The first true leaves are beginning to emerge, indicating that they should be ready within the next week (winter growth is slower). For those unfamiliar with micro greens, samples will be available upon request. Please contact me for a sample when I have micro greens ready to harvest. As with my garden in warm weather months, everything is grown all natural.

Good morning all. As you know the garden season was cut abruptly short this last august after my vehicle was hit by another driver. However; I am back now and will be starting some micro greens (later today I hope). Micro greens are highly nutritious and can be used as topping on food. I will keep you posted and bring you some micro green facts. If you would be interested; please reach out to me. In light of the current government shutdown, I have developed a low-cost meal option that is both flavorful and economical.

This dish, referred to as taco soup or Mexican chili, requires the following ingredients: 1 pound ground turkey, preferably pre-seasoned with taco seasoning, or 1 packet of taco seasoning; 1 cup each of three different dry beans; 1 can diced tomatoes; and water.

To prepare, add dry beans to a crockpot, covering them with 2 inches of water. Cook on high, periodically adding water and stirring as necessary to maintain coverage of water on beans. Once cooked, add ground turkey, cooked in a pan with diced tomatoes to the crockpot with the beans. I successfully doubled this recipe, as evidenced by the 7-quart crockpot filled to capacity.
