Whew, ice cream season is here! Lindsay and the cows are doing their best to keep up with the ice cream demand at the sugarhouse, but you guys are giving us a run for our money! Thank you! Lots of coffee ice cream at the sugarhouse today, more flavors will be ready tomorrow. Stay cool!

Spring is the best time to try your hand at making your own butter. The creamy grass-fed milk has an extra-rich yellow color which makes beautiful, nutrient-rich butter 😍

🧈How: run to the sugarhouse and grab some raw grass-fed milk. Skim the cream off the top (use the skimmed milk for drinking or in baking) and put the cream into a stand mixer. With the whisk attachment whisk the cream until the butter separates from the buttermilk (*recommend putting a towel over the mixer for this step). Strain the butter from the buttermilk, then run the butter under water until the water is clear. Enjoy!

Plenty of general milk is available at the sugarhouse these days, so if you stop in you’ll probably find some! The ice cream freezer is well stocked with some of the best-for-you ice cream you’ll ever eat, made with raw grass fed milk and cream and our own maple syrup!

All of our other usual goodies are well stocked at the sugarhouse too including artwork by Gene Matras, maple syrup in plastic and glass containers, frozen beef products, and soap from The Sudsy Cow.

We had a new baby calf born yesterday! Between an additional cow to milk and milk production already spiking with the cows back on grass for the summer, we are swimming in milk around here and loving it!

You can now find milk for general purchase at the sugarhouse just about every day, especially if you come in the morning. If you have been on our waiting list to be part of our weekly pickup program you will be hearing from us soon. And the ice cream freezer will be nicely restocked by the end of this week!

Talk about a super food - raw grass fed milk you can feel really good about. Thanks for your support of our small dairy!

Fun fact: even through we made the most syrup ever this past year we used less wood than we did the past several years!

How is it possible to make almost 1,000 gallons of syrup on 12 cords of wood? We have several tricks up our sleeves including a reverse osmosis machine. This year we invested in an additional post for our RO that allowed us to take even more water out of the sap than before, making the sap extra sweet before it even hit the evaporator. We love taking advantage of the energy efficient technology available these days in the maple industry while also keeping the atmosphere of the sugarhouse as traditional as possible when you come to see us boil and making as delicious maple syrup as possible.

💻 The square reader is up and running again at the sugarhouse! We will see how things go over this next week…fingers crossed it is fixed for good this time!

🍦 Ice cream will continue to be limited at the sugarhouse for the next month or so, but will be more in stock starting in June, just in time for full-on ice cream season!

Unfortunately the square reader at the sugarhouse is going to be down for the next several weeks. We are experiencing some unusual data issues and are at the point now where we just have to wait for this cycle to reset. In the meantime we will accept cash and checks. Thank you for your patience and understanding, we really appreciate it!
