While most gardeners are just starting their brassicas in April, we are actually reaching the end of our traditional cool-season window. Garden-Fresh Recipe: Braised Sweet-and-Sour Red Cabbage
This classic preparation (often called Rotkohl) is the perfect side dish. It is savory, bright, and holds up beautifully as leftovers.
Ingredients:
• 1 medium head of Red Cabbage (shredded)
• 1 Tart Apple (peeled and diced)
• 1 small Onion (thinly sliced)
• 3 tbsp Apple Cider Vinegar
• 2 tbsp Coconut Sugar or Honey
• 1/4 cup Water or Vegetable Broth
• Salt and Pepper to taste
Instructions:
1. Sauté: In a large pot, sauté the onion in a splash of olive oil until softened.
2. Combine: Add the shredded cabbage, diced apple, vinegar, sweetener, and water. Stir well to coat.
3. Simmer: Cover and cook over low heat for about 35–45 minutes. Stir occasionally, adding a tablespoon of water if the pot looks dry.
4. Finish: Once the cabbage is tender and the liquid has reduced to a glaze, season with salt and pepper.
