Easter dinner … Easter as it was when I was growing up and when my children where young has ceased to be.. I miss those days …. But I am thankful and so very Blessed! Hope yall had a wonderful Easter Sunday!

Cheesy Taters
4 cups thinly sliced potatoes
2 cups milk
2 cups grated cheese..
1/2 stick butter
1 tsp salt
2 Tablespoons flour
Preheat oven to 400*.
Spray large casserole dish with cooking spray and then put half of the butter,
add half the potatoes and about a cup of cheese then add rest of the butter, potatoes and cheese. Cover with lid or tin foil and bake for about an hour, check to see if potatoes are done, if so take cover off and bake for about 10 minutes more.

Peanut butter fudge
Butter a 9x13 dish
Mix together in a heavy pan
1 stick butter
1 can cream/evaporated milk
2 lb bag confectioners sugar
Bring to a boil stir occasionally until it reachers 234* on candy thermometer or soft ball stage. Take off heat and add
12 ozs peanut butter
7 ozs marshmallow cream or melted marshmallows
1 tsp vanilla
Mix well and pour into dish!

Chocolate Fudge
Butter a 13x9 glass dish.
3 cups sugar
1/2 cup cocoa powder
1 1/2 cups milk
1/4 cup butter/margarine
1 tsp vanilla
Dash of salt
Mix sugar, cocoa powder and milk in pan and bring to boil, let it boil stirring occasionally, DON’T stir too much, for about 10 minutes until reaches 234* on candy thermometer or until softball stage!
Take off heat and add butter and vanilla
Should start feeling thick as you stir it! Pour into dish! Enjoy

Banana Bread w/ raisins and pecans

Preheat oven to 350’
3 over ripe bananas
1/2 cup unsalted butter
3/4 cups granulated sugar
2 large eggs
1 1/2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp vanilla
1/2 cup raisins
2/3 cup chopped pecans or walnuts
In mixing bowl cream together butter and sugar, add mashed up bananas and the eggs.
In separate bowl whisk flour, baking soda and salt together then add to batter, add vanilla and nuts and raisins
Mix up well and pour into loaf pan.
Bake for 55-60 minutes.
