When you plant the trees... you water the trees! Its not easy when they're so far from a water source so we made do with the tractor & IBC tote. Thanks to my hubby, Chris, for keeping the little twigs hydrated! Im hoping the rain, for asked for this afternoon, holds true to help them out as well. 🀞🏻🌧🌳

Big changes at the farm this weekend! With the help of family, friends and some heavy equipment we were able to get a lot done! We burned an old grain shed, removed some dead trees & scrub brush, tore out an old dog house/shed, uncovered some buried debris (batteries, tires, scrap metal.. ugh, some people! 😠), graded a hillside, planted new trees (Aspens, Red & Sugar Maples, and White Swamp Oak).

Unpacked some items in the house, assembled shelves, arranged furniture and got to enjoy a few meals around my grandparents dining room table, gifted to me by my cousin Barbara. It felt good to have family & friends gathered around it again!

Thank you to everyone who helped out, Megan, Ben, Tyler, Jeremy, Melissa, Ivan Kollar, Margie. We couldnt do this without you, we appreciate all the love and support in getting this little farm back to rights.

There's still a lot of work to be done to get it back to it's glory, but we're determined to make it happen. Hope you'll join Chris & I on the journey! πŸ‘©β€πŸŒΎπŸ‘¨β€πŸŒΎ

Enjoy the weekend at the Homesteaders of America 2025 Homestead Conference with 6000 of our like minded people. Got to meet Justin & Rebekah Rhodes from Abundant Permaculture, listened to some great speakers and walked away with a lot of great information on how we can be good stewards of the land while providing for our family.

Beautiful weekend "laboring" in the garden. Most rewarding work, if you ask me! Especially when you have a helper as cute as this!

THREE INGREDIENT BAGELS

Three ingredient bagels are my new favorite, no more store bought bagels for us! These are quick, easy and so much healthier!

This makes 4 bagels.

1 c. Plain Greek Yogurt
1 c. Flour (more if needed)
2 tsp. Baking Powder
1 egg, beaten for egg wash

Mix first 3 ingredients into a dough, add more flour if to sticky. Cut into 4 sections and roll into balls. Shape them in to bagels leaving a hole in the middle if you prefer (I did not, I just flattened them a bit). Brush tops with beaten egg wash and sprinkle on any toppings you'd like (Everything Bagel seasoning, brown sugar, Asiago cheese, etc. )

Bake at 375 degrees for 20-25 minutes. Let cool and enjoy!

You could also add mix-ins to the dough before baking such as nuts dried fruits, herbs, cheese, cinnamon sugar, etc.

You can use almost any type of flour, I first made these with gluten free rice flour, and again with a whole wheat flour; they turned out great both times!

Enjoy!
