With the "waste" from our apple cider (peels, cores, etc) we are attempting to make apple cider vinegar! I am using Melissa K Norris from Pioneering Academy's recipe for this. I filled up 2/3 of my gallon jar with apple scraps, and added water to the top. I will let this sit on the counter for 2-3 weeks for the first ferment!
