Creamy Potato Soup πŸ˜‹πŸ˜‹πŸ₯˜
Ingredients:
β€’ I chop 6 slices of bacon.
β€’ I dice half a white onion.
β€’ I mince 4 cloves of garlic.
β€’ I use ΒΌ cup of all-purpose flour.
β€’ I have 2 cups of chicken broth or chicken stock.
β€’ I have 2 cups of whole milk.
β€’ I peel and dice small 2 pounds of red potatoes.
β€’ I shred 1 cup of sharp cheddar cheese.
β€’ I use Β½ cup of sour cream.
β€’ I mince ΒΌ cup of chives.
β€’ I add kosher salt and black pepper to taste.
Instructions:
In a soup pot over medium heat, I cook bacon until crispy and browned. I strain the bacon onto a paper towel-lined plate, leaving the bacon fat in the pot.
I add the onions and cook until they start to soften, about 5 minutes. Then, I add garlic and cook for another minute until fragrant.
I sprinkle in the flour and whisk to combine, creating a thick mixture.
Slowly, I whisk in chicken stock and milk until the mixture is smooth, ensuring there are no lumps.
I add in the potatoes and lower the heat to medium-low. I let the potatoes gently cook, stirring occasionally until soft, making sure the mixture doesn't boil to prevent the milk from burning.
When the potatoes are soft, I use a potato masher to gently mash some of them, creating a creamy consistency.
I stir in the shredded cheese, sour cream, chives, and crispy bacon. Finally, I taste and season with the desired amount of kosher salt and pepper.

I used a rotisserie chicken, and it was so easy and yummy! I paired it with rice and a salad, making it a super easy weekday meal. Even my picky eater approved!

YODER’S AMISH CHOCOLATE PIE ** - Don't Lose This😍
INGREDIENTS
1 cup sugar
2 1/2 tablespoons flour
2 tablespoons cocoa
1 1/2 cups milk
2 egg yolks
1 teaspoon vanilla
3 tablespoons butter, melted
1 9-inch baked pie crust (Try my Amish Never Fail Pie Crust recipe below!)
Whipped cream
Chocolate shavings
INSTRUCTIONS
In a large sauce pan, whisk together the sugar, flour, and cocoa.
In a medium bowl, whisk together the milk, yolks, and vanilla. Pour into the sauce pan.
Turn the heat to medium and stir in the butter. Bring to a simmer and allow to thicken.
Pour into the baked pie crust and smooth the top. Let cool at room temperature for 2 hours and chill in the refrigerator for an additional 2 hours.
Top with whipped cream and chocolate shavings.

BUTTERY PECAN SNOWBALL COOKIES
Ingredients
1 cup butter softened
1/2 cup powdered sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
2 1/4 cups flour
1 cup finely chopped pecans
1 cup powdered sugar for dusting
How to make Buttery Pecan Snowball Cookies
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Cream the butter and powdered sugar in a stand mixer. Adjust the mixer speed to low, then add in the salt, vanilla, flour, and pecans.
Step 3: Into an inch ball, roll the batter and place the balls a few inches apart from each other on parchment-covered baking sheets. Place in the preheated oven and bake for about 11 minutes, making sure to keep an eye on the cookies to not overbake them.
Step 4: Take the cookies out of the oven when done and let them cool a little. Meanwhile, place a cup of powdered sugar in a large Ziploc bag or a wide bowl. Gently coat about 3 to 4 cookies at a time. Scoop the cookies using a fork, shaking gently to remove any excess powdered sugar. On cooling racks, transfer the cookies and let them cool completely before rolling each again in the powdered sugar.

HOMEMADE PECAN SANDIES πŸͺπŸͺπŸͺ
Ingredients
2 sticks butter, unsalted (1/2 lb., softened)
1 cup vegetable oil
1 cup sugar, granulated
1 cup confectioner's sugar (sifted)
2 eggs (large)
1 teaspoon vanilla extract
4 cups flour, all purpose (500 gr.)
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups pecans (chopped)
1/2 cup sugar, granulated (for decoration)
Instructions
Preheat oven to 325 degrees F.
In a large bowl, cream together the butter, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth.
Beat in the eggs one at a time, then stir in the vanilla.
Combine the flour, baking soda, cream of tartar, and salt; stir into the creamed mixture. Mix in the pecans.
Roll dough into 1 inch balls and roll each ball in remaining white sugar.
Place the cookies 2 inches apart onto un~greased cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, or until the edges are golden.
Remove from cookie sheets to cool on wire racks.
