As a nurse working in the hospital for 12 years, I know this is true. I’ve been on the front lines. And that’s why I left, to teach others what living healthy really should look like. To become a healer in the “true” sense of the word.

Since moving to the homestead, cooking from scratch and growing my own vegetables, I’ve healed at least 5 chronic issues in my own “healthy” body that I didn’t even know were issues — chronic UTIs, low immunity, chronic bronchitis, inflamed gut, malnutrition. I had a UTI once a year, bronchitis every winter, 5-6 colds and flus a year, stomach pain after eating, and low energy and I thought, “well that’s normal.” Until everything disappeared and didn’t return. 😳

Fresh-milled flour has changed my health, so naturally I’m always giddy when I can share one of my favorite recipes with you all!!

For Grand Teton Ancient Grains grains comment GRAIN.

Fresh-milled Khorasan wheat pasta:

11/4-1 1/2 c (160-220 g) fresh-milled Khorasan flour
1 teaspoon kosher salt
3 large eggs, room temperature
½ teaspoon olive oil
Instructions
Pasta
1.Sift the flour and salt together onto a clean surface.
2. Form a large well in the center of the flour.
3.Crack the whole egg into the center.
4.Add the egg yolks and olive oil, then whisk the wet ingredients together inside the well
5. Gradually start pulling in the flour from the edges until the dough becomes too thick to mix with a fork.
6. Use a bench scraper to chop through the dough, breaking up gluten strands while gathering the mixture together into one mass.
7. Knead the dough for 7-10 minutes by hand, adding a touch more flour if it feels sticky.
8. Shape it into a ball, cover it, and let it rest for 30 minutes.
Roll the dough into a rectangle about ¼ inch thick (thin enough for your pasta roller’s widest setting).
9. Pass the dough through the roller, reducing the setting each time to make it thinner, running it through once or twice per setting.
10. Now change the roller to the spaghetti attachment.
11. Add the rolled dough creating spaghetti and using your pasta dryer, add pasta to dryer.
12. Cook pasta for 3-5 minutes in 3-4 q water at a rolling boil.
13. Remove and strain.
Serve with your favorite sauce.

I was so excited to share my favorite space with you! This couch by HULALA HOME has been one of our favorite pieces of furniture. We spend so many beautiful moments in the garden, and in the kitchen, but our family room is the space we spend the most time in.
