This one-pan meal was SO GOOD, I already know I’m making it again! 😮‍💨🌮🍚

Coconuts 🥥, if you need something quick, filling, and full of flavor without spending all night in the kitchen, add this 15-Minute Dirty Taco Rice to your rotation. 🙌🏾

One pan + 15 minutes + barely any cleanup = MY kind of dinner. 😂

🌮 15-MINUTE DIRTY TACO RICE

What you’ll need:
🥩 1 lb ground beef
🌮 1 packet Taco Bell Original Taco Seasoning
🍚 1 package taco rice
🫘 1 can black beans, drained & rinsed
🌽 1 can corn, drained
🍅 1 can diced tomatoes with green chiles
🧅 ½ diced onion
🫑 ½ green bell pepper, diced
❤️ ½ red bell pepper, diced
🧂 Salt + pepper to taste
🧀 Optional: shredded cheese, sour cream, avocado, cilantro, jalapeños or hot sauce

How to make it:

1️⃣ Brown your ground beef in a large skillet and drain any excess grease if needed.

2️⃣ Add your diced onions, green peppers and red peppers. Sauté until they begin to soften.

3️⃣ Sprinkle in the taco seasoning and prepare according to the packet directions.

4️⃣ Add your black beans, corn and diced tomatoes with green chiles. Stir everything together.

5️⃣ Prepare/add your taco rice according to the package directions, then combine it with your beef mixture.

6️⃣ Let everything simmer together for a few minutes so all that flavor can get acquainted. 😮‍💨

7️⃣ Load it up with your favorite toppings and DIG IN! 🌮🔥

And just like that… DINNER IS DONE. 👏🏾

PINEAPPLE UPSIDE-DOWN CAKE… with a little tropical razzle-dazzle! 🥥🍰

Hey Coconuts! 🥥 Did you know some of your favorite foods are rooted in culture?

Today, we’re reaching into my family cookbook and pulling out Aunt Deborah’s pineapple upside-down cake recipe. 🤎 Auntie gave us the blueprint, and I’m giving it a little tropical glow-up! 🍍🌴✨

Pineapple upside-down cake is one of those nostalgic desserts that has made its way onto generations of Southern and Black family tables—from Sunday dinners to holidays, cookouts, church functions and family reunions. 🍰🤎

And today, we’re keeping it EASY with a Duncan Hines cake mix because around here, a box cake can still get the auntie treatment. 😂🙌🏾

🍍 PINEAPPLE UPSIDE-DOWN CAKE

You’ll need:
✨ 1 box Duncan Hines Pineapple Supreme Cake Mix
🥚 3 large eggs
🧈 1 stick (½ cup) butter, melted
💧 ½ cup water
🍍 1 can (20 oz.) pineapple slices in juice — SAVE THE JUICE!
🍒 Maraschino cherries
🤎 1 cup packed brown sugar
🌼 1 tsp vanilla extract

Let’s make it! 👩🏾‍🍳

🔥 Preheat your oven to 350°F.

🍍 Drain your pineapple, but DON’T throw that juice away! Reserve ½ cup pineapple juice.

🧈 Pour the melted butter into the bottom of a 9x13-inch baking dish. Sprinkle the brown sugar evenly over the butter.

🍍 Arrange your pineapple slices over that buttery brown-sugar goodness, then pop a cherry into the center of each pineapple ring. 🍒

🥣 In a mixing bowl, combine the Duncan Hines cake mix, 3 eggs, ½ cup water, ½ cup reserved pineapple juice and vanilla extract. Mix according to the cake-mix directions until everything is smooth.

🍰 Gently pour the batter over your pineapples and spread it evenly.

🔥 Bake at 350°F for about 40–45 minutes, or until a toothpick inserted into the cake comes out clean.

⏰ Let it cool in the pan for about 10–15 minutes—but don’t let it completely cool because we need that caramelized topping to release!

Now for the moment that will have you questioning ALL your life decisions… 😂

THE FLIP! 🍰🔄🍍

Place your serving platter over the baking dish, say a quick prayer to the cake ancestors 😂🙏🏾 and FLIP!

And baby… LOOK AT HER. 😮‍💨🍍✨

Buttery brown sugar. Caramelized pineapple. Juicy cherries. Soft pineapple cake.

RESTOCK DAY, so I headed to Aldi with one mission: fill this kitchen with enough breakfast, lunch, dinner, snacks + recipe ingredients to keep us OUT of the grocery store for the next three weeks.

Yellow cake recipe INGREDIENTS

Cake:
• 1 box Betty Crocker Yellow Cake Mix
• 4 large eggs
• 1 cup buttermilk
• 1/2 cup melted butter
• 2 tbsp honey
• 1 tsp vanilla extract

Milk Chocolate Icing:
• 1/2 cup butter (softened)
• 2 cups powdered sugar
• 1/2 cup melted milk chocolate
• 2–3 tbsp milk
• 1 tsp vanilla

INSTRUCTIONS

1. Preheat oven to 350°F. Grease pans.
2. Mix cake ingredients until smooth.
3. Pour into pans and bake 25–30 minutes.
4. Let cake cool completely.

Icing:
5. Beat butter until creamy.
6. Add powdered sugar gradually.
7. Mix in melted chocolate + vanilla.
8. Add milk until smooth and spreadable.

PEACH COBBLER CINNAMON ROLLS 🍑✨

🍑 PEACH COBBLER CINNAMON ROLLS

INGREDIENTS

DOUGH:
• 4 cups all-purpose flour
• 1/4 cup sugar
• 2 1/4 tsp active dry yeast
• 1 cup warm milk
• 1/4 cup melted butter
• 1 egg
• 1 tsp vanilla extract
• Pinch of salt

PEACH FILLING:
• 3 cups diced peaches
• 1/2 cup brown sugar
• 1 tsp cinnamon
• 1 tsp vanilla
• 1 tbsp cornstarch
• Pinch of nutmeg

STREUSEL TOPPING:
• 1/2 cup flour
• 1/2 cup brown sugar
• 1 tsp cinnamon
• 1/4 cup cold butter

CREAM CHEESE GLAZE:
• 4 oz cream cheese
• 2 tbsp butter
• 1 cup powdered sugar
• Splash of vanilla
• 1–2 tbsp milk

HOW TO MAKE IT:
1. Prepare dough and let rise for 1 hour.
2. Cook peaches with brown sugar, cinnamon, vanilla, and cornstarch until thick. Let cool.
3. Roll dough into rectangle and spread peach filling evenly.
4. Roll tightly and slice into rolls.
5. Mix streusel ingredients until crumbly and sprinkle over rolls.
6. Bake at 350°F for 25–30 minutes.
7. Drizzle with cream cheese glaze while warm.

Butter Pecan Cookies 🤎🍪

A cozy, buttery cookie packed with toasted pecans and warm brown sugar flavor.

Ingredients

For the Cookies:

* 1 cup unsalted butter, softened
* 1 cup brown sugar
* ½ cup granulated sugar
* 2 eggs
* 2 tsp vanilla extract
* 2 ½ cups all-purpose flour
* 1 tsp baking soda
* ½ tsp salt
* 1 cup chopped pecans
* 1 cup white chocolate chips (optional but amazing)

Optional Buttered Pecans:

* 1 tbsp butter
* 1 cup pecans

Step 1 — Toast the Pecans

In a skillet over medium heat, melt 1 tbsp butter.
Add pecans and toast for 3–5 minutes until fragrant.
Let cool.

Step 2 — Make the Dough

In a large bowl, cream together:

* softened butter
* brown sugar
* granulated sugar

Mix until fluffy.

Add:

* eggs
* vanilla extract

Mix again.

Step 3 — Dry Ingredients

In another bowl combine:

* salt

Slowly mix dry ingredients into wet ingredients.

Fold in:

* toasted pecans
* white chocolate chips
