🍒🌾 Cranberry Almond Breakfast Squares 🌾🍒
Ingredients:
Dry Ingredients:
1 1/2 cups rolled oats
1 cup almond flour
1/3 cup brown sugar or coconut sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup dried cranberries (or fresh)
1/3 cup sliced almonds
Wet Ingredients:
2 large eggs
1/3 cup melted coconut oil or butter
1/3 cup honey or maple syrup
1 teaspoon vanilla extract
1/3 cup milk (dairy or non-dairy)
Directions:
Mix the Dry Ingredients:
In a large bowl, combine oats, almond flour, sugar, baking powder, cinnamon, salt, cranberries, and almonds.
Mix the Wet Ingredients:
In another bowl, whisk together eggs, melted coconut oil (or butter), honey, vanilla, and milk.
Combine Everything:
Pour the wet mixture into the dry mixture.
Stir until fully combined — the batter will be thick.
Prepare the Pan:
Preheat oven to 350°F (175°C).
Line an 8×8-inch baking pan with parchment paper.
Spread the batter evenly into the pan.
Bake:
Bake for 20–25 minutes, until edges are golden and the center is set.
Cool & Slice:
Let cool completely, then slice into squares.
