The girls were craving hot pot and wanted to make it for their mom for dinner after she got off work. We went to the grocery store, bought what we liked, and went home to prepare it. We all haven’t had hot pot in a while and it was super good and much needed.

Hot pot is super customizable. Mix and match your favorite proteins, veggies, noodles, mushrooms, tofu, and sauces for the ultimate hot pot, lẩu, suki, shabu experience.

What’s your favorite part about hot pot?

Hot Pot Ingredients:
Sichuan and/or Miso Broth
2 pounds Beef, Pork, Lamb, Thinly sliced
1 pound Shrimp, peeled and deveined
1 pound quail eggs
1 pound fish balls
Chrysanthemum leaves
Napa Cabbage
Enoki 
Udon noodles
Bean thread noodles
Knife-cut noodles

Miso Broth Ingredients:
8 cups water + 2 tablespoons dashi powder
¼ cup miso paste
2 tablespoons soy sauce
1 tablespoon mirin
1 tablespoon sugar
1 tablespoon sesame oil
Dried kelp, optional

I’m officially noodled out! 😅 The girls and I literally ate noodles all weekend after making a pot of Hủ Tiếu Nam Vang. I explored different Hủ Tiếu Mì Khô versions like Nam Vang style or with Xá Xíu Hoành Thánh. The options are endless. So good but I need to eat something else now. Will share recipe reels this week!

It wasn’t until earlier this year I started getting more into hủ tiếu after taking my uncle to Hủ Tiếu Nam Vang and was like wow. What have I been missing. Before that, I always felt rice noodles belongs with phở but boy have I been wrong. This bowl loaded with pork broth, pork, fish cakes, and shrimp was super comforting. Can’t wait to share the reel!

Randomly saw Pad Kra Pao up on my FYP and was like damn that looks good, I have all the ingredients, let’s make it. This minced pork and Thai basil stir fry was super easy to make. Done in 15 minutes. Packed with protein, aromatics, and flavor. Surprised I’ve never done it before considering how much I love Thai food. With a crispy fried egg on top. Perfect. Gonna be added to the rotation moving forward.
