$1 oysters Friday Whole Foods Market. Bodega Bay, Hog Island, and Kumamoto. Yum!

Spam and Chinese Sausage fried rice. Will always be my fav way for fried rice…EVER! Perfect dinner with plenty leftovers for meal prep. I love the way rice sticks to bottom of pan for extra crisp.

Ingredients:
5-6 cups of Jasmine rice, day-old cold rice
6 ounces Chinese Sausage, diced
6 ounces Spam, diced
6 ounces shrimp, diced
1 cup frozen mixed vegetables
4 eggs
¼ cup ketchup
2 tablespoons Maggi seasoning or soy sauce
1 teaspoon salt
1 teaspoon sugar
½ teaspoon pepper
3 garlic cloves
Green onions, finely chopped
2-3 tablespoons cooking oil

For my oldest’s Sweet 16, she had a few friends over for a small dinner party. Instead of just making a sushi bake as she requested, I volunteered to be her “Sushi Guy” and recreated some of her favorite rolls like the Lion King Roll and Philly Roll, and created some random rolls like the No Limit Roll which was a hot Cheeto-crusted roll loaded with salmon, shrimp tempura, crab mixture, cucumber, and avocado, for her and a few of her closest friends. They had an amazing time hanging out and I had so much fun cranking out roll after roll for them to enjoy. Am I perfect at rollin rolls? Nope! But after about 20 rolls I def made a lot of progress. All good tho because the flavors were on point! 😎 I ended up with so much leftovers. Can’t wait to make sushirittos with it.
