CREAMY POTATO SOUP AND HAMBURGER
Ingredients:
4 large potatoes, peeled and diced
1 pound ground beef
1 onion, finely chopped
3 cloves garlic, minced
4 cups beef broth
2 cups milk
1 cup shredded cheddar cheese
1/2 cup sour cream
1 teaspoon dried thyme
Salt and pepper to taste
2 tablespoons olive oil
Fresh chives for garnish
Directions:
1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
2. Add ground beef and cook until browned. Drain excess fat.
3. Add diced potatoes, beef broth, milk, and dried thyme to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
4. Stir in shredded cheddar cheese and sour cream until melted and well combined. Season with salt and pepper to taste.
5. Ladle the soup into bowls, and garnish with fresh chives.
