It is amazing how much time you spend on top of a tank when making wine. I was on the 1800 gal. tank. And Mrs. Hamlet is on a 585 gal. tank (pictured).

January is an important month for wine as the blending of last year's harvest begins. Lots of tasting, lots of laughing, lots of wine.

Wine starts out very heavy with particulates. Then we rack, ferment, rack, filter, then filter again and then a final filtering as we bottle. This filter pictured is a cartridge filter. This takes all the microscopic little burdens and produces crystal clear wine.

There is a bunch of other stuff we do to the wine to make it beautiful, this filtering is a small yet big step.

This filter was used while doing Carmenère. As you can see the red in the filter.
