Ingredients
Black cocoa cookies
10 tablespoons (142 g) unsalted butter, softened
1 cup (198 g) granulated sugar
½ teaspoon salt
¼ teaspoon espresso powder
1 large egg
2 teaspoons alcohol-free vanilla flavoring
1 cup (120 g) all-purpose flour
⅔ cup (56 g) black cocoa powder, sifted
3 tablespoons (21 g) cornstarch
¾ teaspoon baking soda
Orange decorating glaze
Use this larger quantity for piped pumpkin faces and fully glazed cookies:
2 cups (227 g) confectioners’ sugar, sifted
Orange gel food coloring
2 teaspoons alcohol-free vanilla flavoring
4 to 6 teaspoons water for the thick piping glaze
An additional 2 to 3 teaspoons water for the thinner flooding glaze
Instructions
Preheat the oven to 325°F or 165°C. Position one oven rack in the upper third and another in the lower third.
Line two large baking sheets with parchment paper.
Place the softened butter, granulated sugar, salt, and espresso powder in a large bowl.
Beat with an electric mixer on medium speed for 1 to 2 minutes, until completely smooth. The mixture does not need to become pale or fluffy.
Scrape down the bowl. Add the egg and alcohol-free vanilla flavoring. Beat again until smooth and fully combined.
Add the flour, sifted black cocoa powder, cornstarch, and baking soda.
Mix on low speed until a thick, evenly black cookie dough forms. Scrape the bottom and sides of the bowl, then mix briefly again.
Scoop level tablespoon portions of dough, approximately 24 g each.
Roll each portion into a smooth ball and arrange the balls on the prepared baking sheets, leaving approximately 1½ inches between them. The cookies will spread into round shapes while baking.
Bake for 28 to 32 minutes. Halfway through baking, rotate the baking sheets from front to back and switch their oven positions.
The cookies are ready when both the edges and centers feel firm and crisp. The centers should not remain soft.
Remove the pans from the oven. Leave the cookies on the baking sheets for about 5 minutes, then transfer them carefully to a wire rack.
Let the cookies cool completely for approximately 45 minutes before decorating.
Make the orange glaze
Place the sifted confectioners’ sugar in a medium bowl.
Add the orange gel coloring, alcohol-free vanilla flavoring, and 4 teaspoons of water.
Stir until the glaze is completely smooth and bright orange.
Add more water, ½ teaspoon at a time, until the glaze is thick enough to pipe without spreading.
Transfer approximately one-third of the thick glaze to a piping bag fitted with a very small round tip. You can also use a small zip-top bag with a tiny corner removed.
Pipe pumpkin outlines, triangular eyes, noses, stitched mouths, and other Halloween faces onto the cooled cookies.
For completely orange cookies, thin the remaining glaze with an additional 2 to 3 teaspoons of water. It should flow slowly but remain thick enough to stay on the cookies.
Pipe a thick border around each cookie. Fill the center with the thinner orange glaze, using a toothpick to guide it into the corners.
Leave some cookies completely black and decorate others with only orange facial details to reproduce the variety shown in the picture.
Let the decorated cookies rest uncovered until the glaze becomes firm, approximately 30 to 60 minutes.
Important tips
Black cocoa powder produces the dark color and distinctive sandwich-cookie flavor. Regular cocoa will create brown cookies instead of jet-black cookies.
Do not remove the cookies too early. This recipe is designed to produce crisp cookies.
Make sure the cookies are completely cool before adding the glaze.
Keep the outlining glaze thick so the facial details do not spread.
Use halal-certified food coloring and decorative ingredients.
Store the cookies in an airtight container at room temperature for several days.
Freeze only the undecorated cookies. The orange glaze may develop spots or condensation after freezing.
