Chicken Alfredo Pasta

Ingredients:

16 ounces dry fettuccine pasta

1 pound boneless, skinless chicken breasts

1 teaspoon Italian seasoning

3/4 teaspoon kosher salt

1/4 teaspoon black pepper

2 tablespoons extra-virgin olive oil

1 tablespoon unsalted butter

1/2 cup unsalted butter (cut into large cubes)

2 cups heavy whipping cream

1 clove garlic, minced

3/4 teaspoon garlic powder

3/4 teaspoon Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

2 cups freshly grated Parmesan cheese

Chopped fresh parsley (optional, for garnish)

Directions:

Cook the Pasta:

Bring a large pot of salted water to a boil.

Add the fettuccine and cook until al dente, following package instructions (approximately 10 minutes).

Reserve 1/2 cup of the pasta cooking water, then drain the pasta and set aside.

Prepare the Chicken:

Season the chicken breasts with Italian seasoning, 3/4 teaspoon kosher salt, and 1/4 teaspoon black pepper.

In a large nonstick skillet, heat the olive oil over medium-high heat.

Once the oil is shimmering, add the chicken breasts and cook for 5-7 minutes on each side, until golden brown and the internal temperature reaches 165°F (74°C).

Add 1 tablespoon of butter to the skillet during the last few minutes of cooking to enhance flavor.

Transfer the cooked chicken to a cutting board, let it rest for 3 minutes, then slice into 1/2-inch-thick pieces. Cover with foil to keep warm.

Make the Alfredo Sauce:

In the same skillet, reduce heat to medium-low and add 1/2 cup of butter and the heavy whipping cream. Whisk until the butter has melted and the mixture is smooth.

Add the minced garlic, garlic powder, Italian seasoning, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Whisk to combine.

Bring the sauce to a gentle simmer (do not boil) and cook for 3-4 minutes, whisking constantly, until it begins to thicken.

Stir in the freshly grated Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add some of the reserved pasta cooking water, a few tablespoons at a time, to reach the desired consistency.

Combine and Serve:

Remove the sauce from heat and add the cooked fettuccine, tossing to coat the pasta evenly.

Divide the pasta among serving plates and top with the sliced chicken.

Garnish with chopped fresh parsley, if desired.
