For St Patty's Day Green Spinach Banana Muffins:
6oz fresh baby spinach
4 Tablspoon butter melted
3/4 C lowfat milk
1/3 C honey
2 small ripe bananas
1 Lg egg
1 tsp vanilla extract
2 C flour
2 tsp cinnamon
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Preheat oven 350 degrees. line muffin tins, set aside
in a blender puree spinach, melted butter, milk honey, bananas, egg and vanilla.
in a separate bowl whisk flour, cinnamon, baking powder, baking soda and salt. add to the wet ingredients in the blender and pulse 2 to 3 minutes, just to blend. some dry ingredients may still be showing.
pour into muffin tin and bake 15-18 minutes or until muffins are firm on top.

Blueberry Streusel:
Mix: 1/2 C softened butter & 3/4 C sugar
Mix: 2 C flour, 1 Tbsp. baking powder, 1 tsp salt,
Make a well in the middle of the flour mix, pour butter/sugar in the well and mix these two together.
Then add: 2 eggs beaten, 1 C milk and 1 tsp vanilla stirring just until mixed. Then gently fold in 1 1/2 C blueberries. These can be frozen or fresh.

Streusel topping:
1 Tbsp melted butter, 1/3 C brown sugar, 2 tsp cinnamon, 1/2 C chopped walnuts and 1/3 C white sugar. This will get crumbly after you mix it. 9x13 pan, bake at 350 degrees for 15-35 minutes, checking with a toothpick. I make these in muffin pans, then individually wrap and freeze.

HOME MADE HAMBURGER HELPER:

Brown 1 # ground beef with 1/2 cup onions and garlic.
Cook 1 1/2 cup macaroni in 3 cups of beef or chicken broth (can make from bullion cubes or soup base)

combine with browned ground beef
2 Tablespoons of ketchup
1 teaspoon dijon mustard
1 teaspoon garlic powder
3/4 teaspoon paprika
1/2 teaspoon chili powder

add cooked macaroni
1 cup sour cream
1 1/2 cup cheddar cheese
1/2 c mozzarella cheese
salt and pepper to taste

Chili: 1 # browned ground beef with 1/2 of cup onions, 1 cup of peppers, big tablespoon of garlic, salt and pepper to taste. Drain and add to crock pot with 3 cans of drained kidney beans, a can of rinsed black beans, 2 cans of diced tomatoes, 2 cups of tomato juice. I added 2 cups of chopped celery and I bet you could add shredded carrots too. 3 tablespoons of chili powder. I add couple of tablespoons of brown sugar if it needs sweetened up a bit. Low heat all day, turn your lid to the side the last hour to let the chili thicken a bit. I love mine served with shredded cheese and sour cream. I usually make enough to have Taco salads the next night and I also like to use chili to dip tortilla chips in for a snack!! It's 7:52 am, is it too early to have a "snack" like this for breakfast????
