Did you know that daikon radishes are great for breaking up compact soil?

Back in November, we harvested these giant daikon radishes that I direct sowed in the beds around July or August.

The main reason that we planted theses radishes was to break up our clay soil in a few of the in ground garden beds. Pretty quickly, we began to see the greens sprout up, and before we knew it, the radishes were pushing right out of the ground!

The thing with daikon radishes, is that you never know how big they actually are until you dig them up. The one that I'm holding in the photo was 18" long from the top of the radish to the tip! (Not including greens)

We left some of the radishes in the ground and harvested these to can. The greens are also delicious to eat!

We love a delicious dutch baby pancake on snowy winter mornings 😋

We made ours gluten free and added some canned raspberry jelly on top from last summer! Ours didn't puff as much, I think because I subbed the gf flour... 🧐

I honestly didn't look too much into why it didn't puff. It was just too delicious to care!

We're deep in winter now, but already dreaming about what we will plant in the Spring!

Most of what we're planning for this coming season has to do with our front yard food forest. We've been looking through catalogs for perennial seeds and plants to add this year that are medicinal, edible or great pollinator plants.
