Easy Grilled Vegetables

Ingredients:
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 yellow squash, sliced
1 medium zucchini, sliced
1 purple onion, sliced
1–1½ tablespoons olive oil
1½ teaspoons kosher salt
Black pepper, to taste
1 lemon, for serving
1–2 tablespoons crumbled feta cheese, optional
1–2 tablespoons fresh chopped herbs, optional

Procedure:
Toss the sliced vegetables with olive oil, kosher salt, and black pepper until evenly coated. Grill over medium-high heat for 8–12 minutes, turning occasionally, until tender with lightly charred edges. Finish with a squeeze of fresh lemon and top with feta and chopped herbs if desired.

Peach Crumble Cheesecake Bars

Ingredients:

For the Crust:
2 cups graham cracker crumbs
½ cup melted butter
¼ cup sugar

For the Cheesecake Filling:
16 oz cream cheese, softened
½ cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups diced peaches

For the Crumble:
¾ cup all-purpose flour
½ cup brown sugar
½ teaspoon cinnamon
¼ cup melted butter

Procedure:
Mix the graham cracker crumbs, melted butter, and sugar until combined. Press firmly into a lined baking pan and bake at 350°F (175°C) for 8–10 minutes. Beat the cream cheese, sugar, eggs, and vanilla until smooth, then spread over the cooled crust and top with diced peaches. Mix the flour, brown sugar, cinnamon, and melted butter until crumbly, then sprinkle over the peaches. Bake for 35–40 minutes, or until the cheesecake is set and the topping is golden. Cool completely before slicing.

Ingredients:
Peanut butter cookies
Creamy peanut butter
Milk chocolate bars, broken into pieces
Large marshmallows

Procedure:
