LEMON BLUEBERRY CRUMB CAKE 🍋🫐
Buttery, moist, lemony, and packed with juicy blueberries!
INGREDIENTS:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1 tbsp fresh lemon zest
2 tbsp fresh lemon juice
3/4 cup whole milk
1 1/2 cups fresh blueberries
1 tbsp all-purpose flour, for tossing blueberries
FOR THE CRUMB TOPPING:
3/4 cup all-purpose flour
1/3 cup brown sugar
1/4 cup granulated sugar
1/2 tsp ground cinnamon
Pinch of salt
5 tbsp unsalted butter, melted
FOR FINISHING:
Powdered sugar, for dusting
Fresh blueberries, optional
Thin lemon slices, optional
PREPARATION:
1. PREP THE BATTER
Whisk flour, baking powder, and salt in one bowl. In another bowl, beat butter and sugar until light and fluffy. Beat in the eggs, vanilla, lemon zest, and lemon juice.
2. ADD THE MILK & FLOUR
Add the dry ingredients and milk alternately in two or three additions. Mix just until combined. Do not overmix.
3. FOLD IN THE BLUEBERRIES
Toss the blueberries with 1 tbsp flour. Gently fold them into the batter, keeping the berries evenly distributed.
4. MAKE THE CRUMB TOPPING
Combine flour, brown sugar, granulated sugar, cinnamon, and salt. Stir in melted butter until large, moist crumbs form.
5. ASSEMBLE & BAKE
Spread the batter into a prepared 9-inch cake pan. Cover evenly with the crumb topping. Bake at 350°F (175°C) for 40–50 minutes, until golden and a toothpick comes out clean.
6. COOL & SERVE
Cool in the pan for 15 minutes, then transfer to a rack and cool completely. Dust with powdered sugar, slice, and serve.
TIP:
Use fresh blueberries and avoid overmixing the batter. Mix only until the flour disappears for a tender cake.
