Today was the first time school was cancelled due to a ā€œsnow day.ā€ When you live in a ski resort town, you can handle some serious snow, but we’ve gotten so much recently (we are Rabbit Ears Pass in the news photo: 50ā€ and snow is up to our windows), not to mention driving yesterday for drop offs and pick ups in whiteout conditions, that they finally called it. Today it’s not snowing, of course, but we are still enjoying a slow morning at home with sourdough discard blueberry buckle and hard boiled eggs for the kids (chicken soup for me)

But don’t feel too jealous. We’ve got some serious shoveling ahead of us.

Jeremiah and I have been nursing along a little sourdough starter for a while. It snowed a ton yesterday and the temps will plummet again tonight, ā„ļø so when I happened upon a sourdough cinnamon roll recipe with maple cream cheese icing from Farm House on Boone, I instantly went into baking mode and started whipping up a batch. Even though I can’t eat them, I derived a lot of pleasure from the process, feeling spongy dough beneath my hands, spreading brown sugar cinnamon butter over top, and snapping pictures as I went.

It was an intriguing recipe for a few reasons, the first being that the whole cinnamon roll dough ferments overnight like a sourdough bread would instead of it simply being a ā€˜discard’ recipe, which means no commercial yeast is used, and two, while there is a bit of brown sugar in the filling, the dough itself and accompanying icing is sweetened with either maple syrup or honey.

Sign me up.

The result smells and looks glorious and the kids say it’s a winner. Jeremy won’t cast his vote until later since he went to work even though it’s technically a holiday and won’t get to sample these beauties warm from the oven—but really, that’s what he gets for being gone. We all have to live with the consequences of our life choices. šŸ˜‰

While in Denver picking countertops for our new house, we were told to take pictures of the slabs we chose. Not sure this is what they meant, but we’re going with it.

PS. This is a post that almost wasn’t since someone in Germany has been trying to hack me hard core all week. If it wasn’t for two factor authentication my Instagram would be gone—BUT YOU CAN’T HAVE IT, HACKERS! I have protected myself sufficiently from you so HA!

Spring Break 2023 taught me I should go on more trips with old friends who feel more like family.

We were supposed to go to Iceland, but when we learned the extended weather forecast called for heavy rain and gloom each day we’d be there, just a few days before we were slated to leave, we decided to postpone and pivot to Cabo instead.

It was 75 degrees and sunny the whole time. We had zero regrets.

We went on an ATV adventure where my son drove me around the whole time, boogie boarded in the ocean—and by that I mean everyone else boogie boarded while I sat in the sun and watched—we played tennis, had pool days, went to the spa, and enjoyed an obligatory dinner at the fabulous . and I both read Spare by Prince Harry, and we introduced our friends to Mezcal with scorpion salt because we are a really great influence.

To say it was a good time is the understatement of the century.

I’ve been away from Instagram so long that I forgot how to make a reel. That’s my update. Today, I was going to make a new recipe that sounded really good and I thought, ā€œyou know what? I could put this on Instagram like I used to.ā€ So I picked up my phone and opened up my app and clicked all the buttons but finally had to ask my daughter ā€œhow do you make an Instagram reel again?ā€ And then ā€œWait. How do I save this?ā€ She knew the answers, which is odd because I don’t think she’s ever posted a reel in her life.

It was a weird day on social media. I was so lost and confused and scared and alone.

And then to top everything off the recipe did not turn out. Seriously though, how do short ribs destined to become a Tuscan Beef and White Bean Ragu that have simmered in crushed tomatoes and red wine and herbs all day not get tender after 8 1/2 hours in a crockpot on low? HOW I ASK YOU?

*A few notes here: 1) if you’re wondering why I’m making a hearty winter-y dish on March 22nd, it’s because it’s still winter here and will be until approximately May 31st. 2) If you are wondering if I’ve lost my ability to cook normal food after a year on the AIP diet, I assure you, I have not. I think my crockpot is just on the fritz. Also, I’ve reincorporated all AIP foods that are Whole Foods like nightshades plus an occasional bite of cheese or glass of winešŸŽ‰šŸ™ŒšŸ‘šŸ¼(!!!) 3) Lastly, since I learned about the short rib blunder, I’ve since turned the heat to high and plan to simmer everything for a few more hours because it smells amazing and you serve this particular dish over pasta (cassava pasta for me) and top it with burrata and a tiny spoonful of pesto and fresh basil and then die and go to heaven so I’m eating this tomorrow obvi, at which time you might see todays rusty reel attempt.

Related: this is not a picture from today. I don't have any pictures from today. This is a picture from a recent trip to the top of the Seattle Space Needle where it was raining and we could see absolutely nothing.

Sometimes I tell my kids I have ā€œerrandsā€ but really I get a mani and pedi and then drive around in my car and sing afterward.

I homeschool and my kids are early risers. That means my kids are with me from 6:30am-8:45pm every day. They grocery shop with me. They go to the post office with me. They cook with me and watch tv with me and I love it but it also means I don’t feel guilty about this indulgence one bit. NOT ONE BIT.

Just now, I walked up to my husband and wrapped my hand around the back of his neck. As I did, he leaned in a little closer to hear me.

ā€œI only ask you give me the same life as Queen Elizabethā€ I said.

ā€œOh. Okayā€ he replied, surprised. Eyes shifting back and forth nervously.

I leaned closer. ā€œDon’t worry. I wasn’t done with my sentence...ā€

Today, Queen Elizabeth’s husband Prince Phillip died at the age of 99. The Queen herself is 94.

And I just felt I should let him know this is the only acceptable scenario.
