KONA COFFEE

Kona coffee is the market name for coffee (Coffea arabica) cultivated on the slopes of Hualalai and Mauna Loa in the North and South Kona Districts of the Big Island of Hawaii. It is one of the most expensive coffees in the world. Only coffee from the Kona Districts can be described as "Kona". The weather of sunny mornings, cloud or rain in the afternoon, little wind, and mild nights combined with porous, mineral-rich volcanic soil create favorable coffee growing conditions.

We went to check out the kona coffee farm in our recent trip to Big Island, Hawaii. This was my first time at a coffee plantation.

SABUDANA KHICHDI

Growing up I wasn't a big fan, my mom would make SABUDANA wada for me while she made khichdi for everyone else. Lately, I have started to really enjoy it. My husband is a huge fan so I occasionally make this when he fasts and I have been taking bu**er portions everytime. It took me while to perfect this recipe because of how sticky tapioca can get if not treated well. Now I have a full proof method and never mess up.

PAKORA KADHI

One of my favorite things to eat especially after a long day or Sunday afternoon. When I was leaving home back in 2011, this was my last meal! You wouldn't expect Punjabi Kadhi to be a staple in a Gujarati home but it totally was! For the longest time we had Punjabi & Sikh neighbors who would make this quite often and I believe my mom learned it from them. 

I had never really eaten this anywhere else except for my home, now that sometimes I eat it in restaurants I miss this version that my mom makes (nothing beats that taste). 

The biggest difference between what my mom makes and mine is that I don't fry the pakoras, I bake them. I don't think baking ever replaces the fried version but this way I eat it guilt free and sometimes over eat it too 😥😆 I hope this brings as much as comfort and joy to you as it brings to me.

HOMEMADE GHEE

My first attempt at making ghee from butter.

It was super simple and tasted device. Just melted some organize cows butter in instant pot for 13 min untill the froth and bubbles went away. Let us cool down and wait for the amazing ghee smell fill your kitchen.

Pass it through a sieve and voila done!

I've been prepping meals pretty much for the last 6 months every Sunday. Here's what we have for the rest of the week.

- Soya mushroom kheema
- Veg jafrezi
- Paprika beans and potatoes
- Langar waali dal
- Punjabi kadhi
