Healthy Pumpkin Protein Muffins

Ingredients

1 cup pumpkin puree
2 large eggs
1/2 cup unsweetened applesauce
1/4 cup pure maple syrup
1 teaspoon vanilla extract
1/2 cup rolled oats
1/2 cup whole wheat flour
1/2 cup protein powder (choose your favorite such as whey or plant based)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Instructions

Preheat your oven to 350 degrees Fahrenheit. Grease a standard muffin tin or line with paper muffin cups.

In a medium bowl whisk together the pumpkin puree, eggs, applesauce, maple syrup and vanilla extract until well blended.

In a separate large bowl combine the rolled oats, whole wheat flour, protein powder, baking soda, baking powder, salt, ground cinnamon and ground nutmeg.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix to keep the muffins tender.

Spoon the batter evenly into the prepared muffin tin filling each cup about 3/4 full. If desired, sprinkle a few extra oats or a pinch of cinnamon on top for extra flavor and texture.

Place the muffin tin in the oven and bake for 18 to 22 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Remove the muffins from the oven and allow them to cool in the tin for about 5 minutes. Then transfer to a wire rack to cool completely.

Frozen Greek Yogurt Peanut Butter Bites

Ingredients

One cup plain Greek yogurt
One half cup peanut butter
Two tablespoons honey
One teaspoon vanilla extract
A pinch of salt

Instructions

In a medium bowl combine the Greek yogurt, peanut butter, honey, vanilla extract, and salt. Stir the mixture well until it is completely blended and smooth.

Using a small spoon, drop the mixture onto a baking tray lined with parchment paper or into small silicone molds. Make each drop about the size of a bite for convenience.

Place the tray or molds in the freezer and let them freeze for at least two hours or until they are firm and set.

When ready to serve, take a few bites out of the freezer and allow them to sit at room temperature for a minute or two to soften slightly. Enjoy these frozen treats as a cool and delicious snack.

Healthy Homemade Butterfingers Gluten Free Vegan Friendly

Ingredients For the Crunchy Base

1 cup gluten free crisp rice cereal
1/4 cup natural peanut butter or almond butter if preferred
1/4 cup maple syrup
2 tablespoons coconut oil melted

Ingredients For the Caramel Layer

1/2 cup Medjool dates pitted and soaked in warm water for 10 minutes then drained
1/4 cup natural peanut butter or almond butter to match the crunchy base choice
2 tablespoons coconut milk
1/2 teaspoon vanilla extract

Ingredients For the Chocolate Coating

1 cup vegan dark chocolate chips
2 tablespoons coconut oil

Instructions

Begin by lining a small baking dish with parchment paper. In a medium bowl combine the gluten free crisp rice cereal peanut butter maple syrup and melted coconut oil. Mix until the cereal is evenly coated. Press the mixture firmly into the prepared dish forming an even layer.

Next prepare the caramel layer. Place the soaked dates peanut butter coconut milk and vanilla extract into a blender or food processor. Blend until the mixture is completely smooth and creamy. Spread the caramel evenly over the crunchy cereal base. Place the dish in the refrigerator for about 30 minutes to help the layers set.

Now prepare the chocolate coating. Combine the vegan dark chocolate chips and coconut oil in a heatproof bowl. Microwave at short intervals stirring every 20 seconds until the chocolate is completely melted and smooth or melt the ingredients over a double boiler on the stovetop.

Remove the dish from the refrigerator. Pour the melted chocolate over the caramel layer making sure to cover it completely and work it to the edges. Return the dish to the refrigerator for at least one hour or until the chocolate coating is fully firm.

Once set remove the layered mixture from the dish using the parchment paper. Using a sharp knife cut the treat into finger sized bars. Store the butterfingers in an airtight container in the refrigerator for the best texture. Enjoy your healthy homemade version of this candy bar treat!

Easy Healthier Butterfingers

Ingredients

1 cup almond butter
1 half cup honey
2 tablespoons coconut oil
1 teaspoon vanilla extract
A pinch of salt
1 cup crisp rice cereal
6 ounces dark chocolate
Optional 1 half cup chopped nuts

Instructions

In a small saucepan place the almond butter honey and coconut oil. Warm the mixture over low heat stirring continuously until it becomes smooth. Do not let it boil.

Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt. If you like extra crunch add in the chopped nuts now.

Gently fold in the crisp rice cereal making sure it is well coated with the mixture.

Line a baking sheet with parchment paper and pour the mixture onto the sheet. Press the mixture into an even rectangular layer about a half inch thick. Place the sheet in the refrigerator for about thirty minutes or until the mixture is firm.

Once firm cut the chilled mixture into finger shaped pieces.

For the coating gently melt the dark chocolate either in a microwave or using a double boiler. If using a microwave heat in short bursts stirring in between to maintain a smooth texture.

Dip each finger into the melted chocolate or drizzle the chocolate over the top of the pieces. Return the pieces to the lined baking sheet.

Allow the chocolate coating to set either at room temperature in a cool area or in the refrigerator until completely firm.

Your Easy Healthier Butterfingers are now ready to enjoy. Store any leftovers in an airtight container kept in the refrigerator.

Frozen Greek Yogurt Peanut Butter Bites

Ingredients

1 cup thick Greek yogurt
1/2 cup natural peanut butter
2 tablespoons honey
1 teaspoon vanilla extract
A pinch of salt (optional)
2 tablespoons chopped peanuts (optional garnish)

Instructions

In a medium bowl combine the Greek yogurt peanut butter honey vanilla extract and salt if you are using it. Stir the mixture well until it is smooth and all the ingredients are fully incorporated.
Prepare a small baking tray by lining it with parchment paper or use small silicone molds. Using a teaspoon or a small spoon drop dollops of the mixture onto the tray or fill the molds with about one inch sized portions.
If you like extra crunch you can sprinkle a few chopped peanuts on top of each dollop.
Place the tray or the molds in the freezer and leave them for at least two hours or until the bites become firm.
Once frozen remove the bites carefully from the tray or the molds and store them in an airtight container in the freezer.
Enjoy these cold and refreshing treats directly from the freezer as a healthy snack or dessert.

Ingredients:
½ cup Greek yogurt
½ cup peanut butter
¼ cup honey or maple syrup
1 teaspoon vanilla extract
1 ½ cups rolled oats
2 tablespoons unsweetened cocoa powder
1 tablespoon chia seeds
¼ teaspoon cinnamon
Pinch of salt
¼ cup mini chocolate chips

Directions:
Line an 8×8-inch square pan with parchment paper.
Mix Greek yogurt, peanut butter, honey or maple syrup, and vanilla until smooth.
Stir in rolled oats, cocoa powder, chia seeds, cinnamon, and salt until a thick mixture forms.
Fold in mini chocolate chips.
Press the mixture firmly and evenly into the prepared pan.
Refrigerate for 2–3 hours until firm.
Slice into bars and serve chilled.

Instructions

Ingredients:
• 60 g almonds
• 60 g walnuts
• 60 g cashews
• 180 g dark chocolate, melted

Method:
Blend the almonds, walnuts and cashews in a food processor until finely ground and the mixture starts to hold together. Spoon melted chocolate into silicone moulds and coat the base and sides. Chill until set. Press the nut mixture inside, cover with more melted chocolate and refrigerate until firm. Unmould and enjoy!
