Healthy cooking being a fav hobby of mine, after this week’s pick up of Piedmont Fresh foods (locally grown food produced by area farms), I spent most my Sunday enjoying creating delicious recipes for the week’s ahead repast - didn’t get to everything I’d ordered, but used many of my items.

I started with beautiFUL collards making fresh Collard Greens salad! (πŸ˜‰ Wanted to do something different other than just cook them.) Recipe included sun dried tomatoes, minced garlic, walnut and sunflower oils.

Then on to radiant radicchio with lovely aromatic baby fennel bulbs and fronds (again Piedmont Fresh order items) I prepared a Radicchio Fennel Apple salad and kept the fronds aside for use lastly (read on to see what the fronds were used for).

From there I whipped up robust Butternut Squash Fritters with left over fresh oven roasted butternut squash, our chicken’s πŸ“fresh eggs, rosemary, and chives (thanks to family for sharing the squash! 😘).

Then another Piedmont Fresh item, turnips and their greens (which I added to the collard salad! πŸ˜‰Nothing left to waste!). Using carrots πŸ₯• on hand I added the turnips and cooked slowly with garlic oil to flavor.

And so the afternoon ended with the making of two pestos - Fennel Pesto and Collard Pesto! WOW! 🀩 Made with pine nuts, garlic, lemon juice, sunflower oil and Parmesan. Had never made these pestos before, and now will add them to my regular fall menu line up of condiments. πŸ˜‹

Flank Steak (also courtesy Piedmont Fresh) was gas grilled by my loving grill master husband 😘.

At face value, I’d say the Italians have it! Molto bene!
