Tried something new this year, came out so good I’m currently fermenting a second batch. These are lacto fermented pickles. They sit in this crock for a week underneath a salt and water brine. Alongside the cucumbers there are black peppercorns, fresh dill & garlic. Unlike my refrigerator pickles, there is no vinegar added to this brine. The lactobacillus bacteria makes them sour and pack them full of probiotics. A pickle you can eat and know it’s taking care of your gut! They are so sour and crunchy, it’s crazy that people stopped making foods this way.

Apparently our yard is a treasure trove for ghost pipe. Ghost pipe should not be eaten, but rather tinctured and used medicinally. It’s amazing for pain and anxiety.
