To everyone celebrating today, I wish you a very Merry Christmas. Let today be the day that the crazy nature of this season comes to a close and you're able to feel the true peace it has to offer. My wish for you is that you're able to sit back with your family and give them the gift of your undivided presence. Look at them through clear eyes. Truly listen to them and hear what they have to say. Be one with them and share in their joy and love. There's a reason you can't buy a gift like this; it's priceless. And while you're enjoying this gift, please spare a thought for our military members and first responders who can't be with their families today because they're too busy looking out for us... From my family to yours and from the bottom of our hearts we wish you a Merry Christmas.

Immune Booster Chicken Soup
3T Kerrygold Butter
1 small onion, diced
3 stalks of celery, diced
7 medium carrots
7 cloves garlic, minced
1T fresh grated ginger
2 medium or 1 big sweet potatoes, peeled and cut into 1-inch cubes (about 1 pound)
2 pounds boneless, skinless chicken breast
6 cups chicken broth or bone broth
1t fresh chopped thyme
½t coarse sea salt
¼t black pepper
2 bay leaf
3T turmeric
1 can full-fat coconut milk
1 head or more lacinato kale, de-stemmed and roughly chopped
2T lemon juice (about 1 lemon)

Brown the chicken. First, you'll brown your chicken breasts or thighs in the same pot that you'll be making the soup in. You don't want to cook them all the way through, but searing will help you build flavor.

Remove Chicken, Saute the onions, garlic, and celery until they are just tender.

Next, you'll quickly saute the ginger, then add the chicken back to the pot along with the sweet potatoes, broth, and seasonings. Simmer for 30-40 minutes, until the chicken shreds easily with a fork and the sweet potatoes are fully cooked.

Stir in the coconut milk and Lacinato Kale. Stir in the coconut milk and the kale and let it cook for 2-3 minutes, until the kale turns bright green, then turn off the heat.

Squeeze in the lemon juice and taste for seasoning.

Tangy Honey Garlic Chicken
6 chicken thighs, bone in or out, with or without skin*
Salt and pepper, to season
2 t garlic powder, to season
6 cloves garlic, crushed
⅓ c honey
¼ c water
2 T rice wine vinegar
1 T soy sauce
Crushed Red Pepper

Instructions
Season chicken with salt, pepper and garlic powder; set aside.

Heat skillet over medium high heat; sear chicken thighs on both sides until golden and cooked through.

Sauce
When chicken is done and cooked through, arrange chicken skin-side up in the pan (if cooking with skin); add the garlic between the chicken and fry until fragrant (about 30 seconds). Add the honey, water, vinegar and soy sauce Crushed Red Pepper. Increase heat to medium-high and continue to cook until the sauce reduces down and thicken slightly (about 3-4 minutes).

Garnish with parsley and serve over Rice, riced Cauliflower and served with a Grilled Roman Salad

Chicken Sausage
1 pound ground chicken
½ cup finely diced peeled apple
1 t garlic powder
½ t rosemary
½ t dried sage
½ t fennel
½ t salt
¼ t pepper
2–3 T avocado oil or olive oil

Combine all ingredients into a mixing bowl, except for the oil, and mix well using your hands so it is combined well
Heat the oil in a large skillet over medium heat. While the skillet is heating, form the chicken sausage mixture into patties (6-8 patties, depending on how thick you want them)
Once hot, add the sausages into the skillet. Cook on each side for about 4-5 minutes, or until cooked thoroughly. Sausage is ready to be flipped when it comes up easily from the skillet, do not try to flip them if sausage patty is still sticking to the pan.

Tequila Lime Chicken topped with Mango Salsa

Ingredients

Tequila Lime Chicken-
¼ cup tequila
2 tablespoons lime juice plus zest
2 cloves garlic minced
1 tablespoon cumin
1 teaspoon smoked paprika
1 teaspoon kosher salt
½ teaspoon chili powder
¼ teaspoon black pepper
¼ cup olive oil
1½ pounds chicken breasts thinly sliced or flattened to ½-inch thick, (4 breasts)

Glaze-
2 tablespoons honey
1 tablespoon lime juice

Mango Salsa-
1 mango cubed
½ cup tomatoes diced
1 avocado cubed
¼ cup red onion diced
zest and juice of 1 lemon
½ jalapeño minced
½ cup cilantro leaves chopped

Instructions

Tequila Lime Chicken Marinade-
Whisk all marinade ingredients together; tequila, 2 tablespoons lime juice, zest, garlic, cumin, paprika, salt, chili powder, black pepper and olive oil.

Put chicken in a resealable plastic bag just large enough to fit the chicken.

Pour marinade over the chicken, turning to coat. Remove any air from the bag and seal.

Allow chicken to marinate for 20 to 30 mins (room temperature) to 1 hour (refrigerated).

Glaze-
Combine in a small bowl 2 tablespoons honey and 1 tablespoon lime juice, set aside.

Mango Salsa-
In a medium-sized bowl combine mango, tomato, avocado, red onion, lemon zest and juice, jalapeno and cilantro.

Cover and refrigerate until ready to use.

Tequila Lime Chicken-

Heat grill to medium-high. Add a small amount of vegetable oil on a folded piece of paper towel, and then carefully grease the grill with the oil.

Once the grill is nice and hot, add the marinated chicken breasts and discard the marinade.

Cook chicken on each side until no longer pink (160-165°F), about 4-6 minutes on each side, depending on the thickness of the chicken.

After flipping the first side, brush the glaze onto the chicken.

Remove the chicken from the grill and transfer to a clean plate, cover to keep warm.

Brush more glaze on hot chicken before serving and top with mango salsa
