This is what l don’t feel like cooking” is looking like these days 🫠😂

threw some veggies & beans in a pot, added ground cooked bratwurst & bacon, canned corn & spices.

& store bought corn bread from R-N Market and it was so good, I’d buy it again. A little soft and breaks easy, but the taste was great🤌🏽

Lao inspired food for Dinner! 🇱🇦

In my kitchen, I’m always experimenting, sometimes following directions, mostly winging it.

I’m proud of this one! I know what could be better & what I will do differently next time.

🍗Here’s what I made:

-Sticky rice ( khao niew)
-spicy tomato salsa ( jeow mak len )
-roasted chicken (ping kai)

Don’t know what to eat when you don’t feel like “really cooking”?

Chicken Patty Sandwich! And I loved these panko-breaded chicken breast patties by Perdue Farms for our family because they have NO antibiotic’s!

I did make an Avocado & Cilantro aioli for this instead of using mayo.

1. breakfast casserole
- potatoes
- ground beef cooked & drained
- bacon cooked & chopped
- chopped bell pepper
- chopped green onion
- spinach (or chopped veggies or your choice)
**use seasonings & spices you like for the eggs:
I Used Salt, pepper, onion powder, garlic powder**

2. Southwest ground beef taco bowl
- onion
- garlic
- ground beef + Matt Pittman - Meat Church chili seasoning
- sweet corn can or frozen (strain if can)
- black beans strained & rinsed
- tomatoes
- cilantro for garnish (but I added more@bc it’s so good)
NOW, you can Add Rice
Or Skip the rice and just add cheese 💛


I personally do not like how the last photo was taken but it is what it is. 🤷🏽‍♀️
I wanted to eat and at this point after cooking, prepping & feeding everyone.. I was starved and over “plating” for the day lol the Chef had to eat!

Reminiscing on the one time I was introduced to Angelina’s.
A fun walk downtown, Cozy space, big flavor, and unforgettable gyros. 🇬🇷 Half the fun of traveling is trying local gems like Angelina’s Greek Gyros in Portland! Major thanks to my cousin for the killer recommendation 🤤🥙

My husband and I shared because we planned on getting more food ridge after…. But we were so upset we did t get our own🤭🫠 haha they were THAT good!
