Sunday dinner + All local = So good on SO many levels❗️
Local ground beef burgers 🍔 topped with caramelized onions 🧅(James Lee). Served with sliced tomatoes 🍅(James Lee), French style potato 🥔 salad (Gomez produce, James Lee 🧅, Fuerte Farms🌿), and berry cobbler 🥣🫐 for dessert (Harvest to Home Farms, Old Blue Farms)
French style potato salad is good warm, room, temperature or cold, and it lets the ingredients shine ☀️
French-style potato salad-
Slice scrubbed potatoes (peel on - small work best) into 1/4 in. slices. Place in a large saucepan & add water until just covered and a heavy pinch of salt. Heat to boiling, then turn down to medium & cook until fork tender.
While potatoes are cooking, thinly slice 1 cup green onions (I used smaller onions with tops). Add to a large bowl then add the drained potatoes. Drain & let cool/dry a bit. Add to bowl. Add 1 tbsp. apple cider vinegar & set aside.
For dressing, combine 2 1/2 tbsp. stone ground mustard, 1 tbsp. apple cider vinegar, 3 tbsp. Red wine vinegar, 3 cloves minced garlic, 1/2 tsp. salt, 1/4 tsp. pepper & 3 tbsp. good olive oil. Whisk to combine.
Add dressing & 1/4 cup chopped fresh dill to the potato mixture & gently toss to coat.
