Ingredients:

4 large russet potatoes
1 medium onion
2 eggs
¼ cup all-purpose flour
½ tsp sea salt (or to taste)
¼ tsp pepper (or to taste)
2 tbsp vegetable oil for frying
Instructions:

If using a food processor, peel and cube the potatoes and onion. Process until they resemble grated potatoes with no lumps. If using a grater, peel and grate the potatoes and onion.

Place the potato mixture into a fine strainer or kitchen towel, and squeeze out most of the liquid into a mixing bowl. Keep the potato starch that settles at the bottom of the bowl.

Return the potato mixture to the bowl and add eggs, flour, salt, pepper, and the reserved potato starch. Mix thoroughly.

Heat vegetable oil in a large non-stick skillet over medium heat. Add spoonfuls of the potato mixture, flattening slightly. Fry for 2-3 minutes on each side until golden brown and crispy.

Place the pancakes on a paper towel to remove excess oil. Enjoy!

Bottom Layer:

3 cups all-purpose flour
1 ½ cups milk
1 cup white sugar
2 eggs
4 teaspoons baking powder
2 teaspoons vanilla extract

¼ cup melted butter
Top Layer:

1 cup softened butter
1 cup brown sugar
2 tablespoons all-purpose flour
1 tablespoon ground cinnamon
Sweet Glaze:

2 cups confectioners’ sugar
5 tablespoons milk
1 teaspoon vanilla extract
Instructions:

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
In a large bowl, mix together 3 cups of flour, milk, white sugar, eggs, baking powder, 2 teaspoons of vanilla extract, and salt until well combined. Stir in the melted butter. Pour this batter into the prepared baking pan.
In another bowl, beat together 1 cup softened butter, brown sugar, 2 tablespoons of flour, and ground cinnamon until smooth. Drop spoonfuls of this mixture over the batter in the pan.
Use a knife to create a beautiful marble effect by swirling the top layer into the bottom layer.

Ingredients:

1 lb ground beef
1 can (16 oz) refried beans
1/2 cup finely chopped onion
3 cans (8 oz each) tomato sauce, divided
2 tsp chili powder
1 tsp minced garlic
1/2 tsp ground cumin
12 (10-inch) flour tortillas, warmed
1 can (4 oz) chopped green chilies
1 can (4 oz) chopped jalapeno peppers
Oil for deep-fat frying
1 1/2 cups shredded cheddar cheese
Instructions:

In a large skillet, cook ground beef over medium heat until no longer pink; drain. Add beans, onion, 1/2 cup tomato sauce, chili powder, garlic, and cumin. Stir and simmer until well combined.

Spoon about 1/3 cup of the beef mixture off-center on each tortilla. Fold the edge nearest to the filling up and over to cover. Fold in both sides and roll up. Secure with toothpicks.

In a large saucepan, combine chopped green chilies, jalapeno peppers, and the remaining tomato sauce. Heat through.

1- 28 oz can diced tomatoes, undrained

1 whole Vidalia onion, chopped

6 whole sheets of eggroll wrappers
1 cup Cheez Whiz cheese for dipping
1/2 cup banana peppers
Small bowl of water to wet your fingers
Vegetable oil, for frying
Instructions:

½ cup salted butter
½ cup all-purpose flour
2 cups milk, at room temperature (2% or whole)
2 cups half-and-half, at room temperature
1 tsp Worcestershire sauce
12 oz cubed Velveeta cheese, at room temperature
3 cups grated sharp cheddar cheese, divided (at room temperature)
1 tsp salt
½ tsp dry mustard
¼ tsp black pepper
Pinch of nutmeg
Instructions:

Preheat Oven: Preheat oven to 325°F. Grease a 9x13-inch baking dish and set it aside.

Cook Pasta: Boil pasta in salted water for 1 minute less than the package's al dente suggestion (about 8 mins). Drain and toss with a drizzle of olive oil to prevent sticking.
