🥩🍷 Red Wine Braised Lamb with Garlic Mashed Potatoes 🥩🍷

Ingredients:
For the Braised Lamb:
- 4 lamb shanks
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 1 cup red wine
- 1 cup beef or chicken broth
- 1 tbsp tomato paste
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 bay leaf
For the Garlic Mashed Potatoes:
- 2 lbs potatoes, peeled and cubed
- 4 cloves garlic, peeled
- ½ cup milk
- 4 tbsp unsalted butter
- Salt and black pepper, to taste
- Chopped fresh parsley (optional)
Instructions:
Prepare the Braised Lamb:
1. Preheat Oven: Preheat to 325°F (165°C).
2. Season the Lamb: Pat lamb dry, season with salt and pepper.
3. Sear the Lamb: Heat olive oil in a Dutch oven over medium-high. Sear lamb shanks until browned (3-4 minutes per side). Set aside.
4. Sauté Vegetables: In the same pot, sauté onion, carrots, and celery for 5 minutes. Add garlic and cook for 1 more minute.
5. Deglaze Pot: Pour in red wine, scrape up browned bits. Stir in tomato paste and cook for 2 minutes.
6. Add Broth and Herbs: Return lamb to the pot, add broth, rosemary, thyme, and bay leaf. Liquid should cover 2/3 of the lamb.
7. Braise: Cover with lid, transfer to oven, and braise for 2.5 to 3 hours until lamb is tender.
Prepare the Garlic Mashed Potatoes:
1. Boil Potatoes and Garlic: Combine potatoes and garlic in a pot, cover with water, and boil until tender (15-20 minutes).
2. Drain and Mash: Drain, return to pot, add butter and milk, mash until smooth. Season with salt and pepper.
Serve:
1. Plate the Dish: Place lamb on a platter, spoon braising liquid and vegetables over the top.
2. Serve with Mashed Potatoes: Serve alongside garlic mashed potatoes. Garnish with parsley if desired.
