I started cooking in the Boy Scouts when I was around 13 years old. When I was sixteen I got my first real job as a bus boy at the only fancy restaurant in town. Then moved to a dish washer, then a prep cook, a waiter. I spent a lot of time in commercial kitchens doing a lot of jobs up to my early twenties working my way through college. After college I went in a totally different direction. Healthcare administration. I never lost my love of cooking, it just wasn't a career. I spent 20 years working in offices and cooking at home. It wasn't until my late forties that I felt like something was missing. I started a local charity focused on feeding the hungry. Then I started the cooking blog. Cooking is still not my day job, but now I cook on a regular basis for the least of the these, the homeless. It is extremely satisfying to hear people ask if I'm cooking today (with excitement) when I walk into the homeless shelter. They have so little and so many challenges. To be able to offer a meal that they will enjoy eating brings so much happiness to my heart. I also love doing community picnics to feed those that need some help.

Perhaps in retirement I'll open a restaurant or get a food truck (should I live so long). Until then I'll just keep cooking for those that need a little help.

I'm just an old guy in the kitchen, but I'm happy to help others find joy in cooking and helping others in my community.

I don't talk about it much here, but on Sundays I cook at the local homeless shelter. Today we had stuffed peppers, ratatouille and French bread. If you think you don't like vegetables you really need to try ratatouille. Zucchini, egg plant, and tomatoes simmered in a sauce of mirepoix, garlic and crushed tomatoes (San Marzano are the best!). I really need to post these recipes because we had no leftovers.

Today I made beef bourginion over mashed potatoes for lunch at the homeless shelter. I had a generous donation of mushrooms, onions, rainbow carrots and potatoes. It seemed like a no brainer. I did underestimate the time it takes to make this for 30+ people, lol. I had to prep in batches to get everything cooked. The end result was pretty dang good. I don't know how many shelters are serving French cuisine, but everyone loved it. My philosophy is if you are staying at the shelter life is already pretty hard, a really good meal might just make your day.
