A proper old-school favourite! Tender lambโ€™s liver cooked with sweet caramelised onions in a rich gravy, perfect served over buttery mash with seasonal veg on the side.

Ingredients

๐Ÿ‘ Lambโ€™s liver: 500g, sliced and trimmed
๐Ÿง‚ Plain flour: 50g, seasoned with salt and pepper
๐Ÿง… Onions: 2 large, thinly sliced
๐Ÿงˆ Butter: 25g
๐Ÿ›ข๏ธ Sunflower oil: 2 tbsp
๐Ÿ– Beef or vegetable stock: 400ml
๐ŸŒฟ Fresh thyme: a few sprigs (optional)
๐Ÿฅ” Mashed potatoes: to serve
๐Ÿฅฌ Steamed greens or Brussels sprouts: to serve

Method

๐Ÿง… 1. Heat 1 tbsp of the oil and the butter in a frying pan over medium heat. Add the sliced onions and cook gently for 15โ€“20 minutes until golden and soft. Remove from the pan and set aside.
