I have learned this week how to make Cheong (pronounced chong). Cheong is a fermented Corean dish that you can make with fruit/flowers/vegetables. It is packed with vitamins and flavors. I made mine with lemons, fresh ginger and sugar. Any fruit will do or any combination of fruit. You use equal parts fruit and sugar. Method: Select your fruit and ginger, wash it and cut it up in small blocks. Next you add 2 thirds of sugar and mix the fruit and sugar well. Pour it into an airtight container and pour the remaining 1 third of sugar on top of the fruit mixture. Seal and place the container in a dark cupboard for two days. After two days the sugar will dissolve and form a syrup. Mix well again and put the container in your fridge. The syrup mixture can be added to black tea, to cereal or as a topping on a desert, to name a few.
