The perfect Father’s Day gift for the king of potjiekos
Let Dad fire up the potjie cooker you’re gifting him this Father’s Day with this hearty Biltong Pasta Potjie recipe — a rich, smoky South African comfort meal perfect for winter weekends around the fire.
Biltong Pasta Potjie Recipe
Ingredients:
• 250g biltong (sliced or chopped)
• 1 onion, finely chopped
• 2 cloves garlic, minced
• 1 tbsp butter or olive oil
• 1 punnet mushrooms, sliced
• 1 tsp smoked paprika
• 1 tsp mixed herbs
• 500ml fresh cream
• 1 cup beef stock
• 250g pasta shells or penne
• 1 cup grated cheddar cheese
• Salt & black pepper to taste
• Fresh parsley for garnish
Optional Extras:
• Crispy bacon
• Baby spinach
• Chilli flakes for heat
Method:
Heat your potjie over medium coals.
Add butter/oil and sauté onions until soft.
Add garlic and mushrooms and cook until browned.
Stir in the biltong and smoked paprika.
Pour in cream and beef stock.
Add uncooked pasta and stir well.
Cover with the lid and simmer gently for 20–25 minutes, stirring occasionally.
Once the pasta is tender, stir through the cheese.
Season with pepper and garnish with parsley.
Serve hot with garlic bread or roosterkoek for the ultimate winter feast.
