When Blue Oyster mushrooms are cooked, their taste and texture changes depending on how they are prepared.
The taste -
Mildly Earthy: They possess a gentle, woody earthiness that is much softer and less pungent than a button or portobello mushroom.
Umami & Savory: They are naturally rich in glutamate, giving them a deeply satisfying, savory "brothy" flavour.
Subtle Seafood Notes: True to their name, they can carry a very faint, delicate hint of ocean brine or sweet shellfish, though it is not overpowering.
Faintly Sweet: Some palates detect a subtle, sweet anise (liquorice) or nutty undertone when cooked gently.
The texture -
Meaty & Chewy: The caps are tender and velvety, while the stems are dense, firm, and fibrous.
