Super Moist Lemon Pound Cake is such a great combination of rich and refreshing!

Ingredients:

1 1/2 cups (190g) all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 cup (2 sticks, 226g) unsalted butter, softened

1 1/4 cups (250g) granulated sugar

4 large eggs

2 tablespoons lemon zest (about 2 lemons)

1/4 cup fresh lemon juice

1 teaspoon vanilla extract

1/2 cup (120ml) buttermilk (or whole milk)

Directions:

1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large bowl, cream the butter and sugar together until light and fluffy, about 3-5 minutes.

📝 Ingredients
• 1 cup (225 g) unsalted butter, softened
• 1 ½ cups (300 g) sugar
• 4 large eggs (room temperature)
• 1 ¾ cups (220 g) all-purpose flour
• ½ cup (50 g) cocoa powder
• 1 tsp baking powder
• ½ tsp salt
• ½ cup (120 ml) whole milk (room temperature)
• 1 tsp vanilla extract
• 100 g (about ½ cup) melted dark chocolate (optional but makes it richer)

📝 Instructions
1. Preheat oven to 175 °C (350 °F). Grease and line a 9×5-inch loaf pan or similar size.
2. In a bowl, whisk flour, cocoa, baking powder, and salt.
3. In another large bowl, cream butter and sugar until pale and fluffy (about 2–3 minutes).
4. Beat in eggs one at a time, mixing well after each addition.
5. Mix in vanilla extract.
6. Add dry ingredients alternately with milk, beginning and ending with the dry.
7. Fold in melted dark chocolate (optional but adds moistness).
8. Pour batter into prepared pan. Smooth the top.
9. Bake 55–65 minutes or until a skewer inserted in the center comes out clean.

Oreo Dessert Cups

🧾 Ingredients
• 24 Oreo cookies
• 2 tbsp melted butter
• 1 cup heavy whipping cream
• ½ cup powdered sugar
• 1 tsp vanilla extract
• 1 cup cream cheese (softened)
• ½ cup chocolate pudding (optional)
• Extra crushed Oreos for topping

👩‍🍳 Instructions
1. Make the Oreo crust
• Crush 12 Oreo cookies into fine crumbs.
• Mix with melted butter.
• Spoon the mixture into the bottom of dessert cups and press lightly.
2. Prepare the cream filling
• In a bowl beat cream cheese until smooth.
• Add powdered sugar and vanilla.
• In another bowl whip the heavy cream until fluffy.
• Fold the whipped cream into the cream cheese mixture.
3. Assemble the dessert cups
• Layer Oreo crust in the cup.
• Add a layer of cream filling.
• Add chocolate pudding (optional).
• Sprinkle crushed Oreos.
4. Repeat layers
• Add another cream layer and Oreo crumbs on top.
5. Chill
• Refrigerate for 1–2 hours before serving.

🧾 Ingredients

For the cake
• 2 cups all-purpose flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1½ tsp cinnamon
• ½ tsp salt
• ¾ cup vegetable oil
• 1 cup sugar
• ½ cup brown sugar
• 3 eggs
• 2 tsp vanilla extract
• 2 cups finely grated carrots
• ½ cup crushed pineapple (optional but makes it moist)
• ½ cup chopped walnuts or pecans (optional)

For the cream cheese frosting
• 8 oz (225 g) cream cheese, softened
• ½ cup butter, softened
• 3 cups powdered sugar
• 1 tsp vanilla extract
• 1–2 tbsp milk (if needed)

👩‍🍳 Instructions

1. Prepare the oven

Preheat oven to 350°F (175°C).
Grease two 8-inch round cake pans and line with parchment paper.

2. Mix dry ingredients

In a bowl whisk together:
• flour
• baking powder
• baking soda
• cinnamon
• salt

3. Mix wet ingredients

In another bowl beat:
• oil
• sugar
• brown sugar
• eggs
• vanilla

Mix until smooth.

4. Combine

Gradually add the dry ingredients into the wet mixture.

5. Add carrots

Fold in:
• grated carrots
• pineapple
• nuts (optional)

6. Bake

Divide batter evenly between the two pans.

Bake 30–35 minutes or until a toothpick comes out clean.

7. Cool

Let cakes cool completely before frosting.

• ½ cup fresh orange juice
• ½ cup milk
• 1 tsp vanilla extract

For the orange glaze
• 1 cup powdered sugar
• 2–3 tbsp fresh orange juice
• ½ tsp orange zest (optional)

👩‍🍳 Instructions
1. Preheat oven to 350°F (175°C). Grease a loaf pan.
2. Mix dry ingredients
In a bowl whisk together flour, baking powder, and salt.
3. Cream butter and sugar
Beat until light and fluffy (about 2–3 minutes).
4. Add eggs
Mix in eggs one at a time.
5. Add flavor
Stir in orange zest, vanilla, and orange juice.
6. Combine mixtures
Add the flour mixture gradually, alternating with milk.
7. Bake

For the cake
• 2 cups all-purpose flour

• ½ tsp baking soda
• ½ tsp salt
• ¾ cup sugar
• ½ cup butter (softened)

• ¾ cup milk or buttermilk
• 1 cup glacé or maraschino cherries (chopped) 🍒
• ½ cup yellow candied fruit or peaches/apricots (chopped)
• ½ cup raisins or currants (optional)
• ½ cup chopped pecans or walnuts (optional)

For the glaze
• 1 cup powdered sugar
• 2–3 tbsp milk or lemon juice

🟤 For the Cake
• 2 cups flour
• ¾ cup cocoa powder
• 1½ cups granulated sugar
• 1 packet baking powder
• 1 packet vanilla extract
• ½ teaspoon salt
• 2 eggs
• 1 cup milk
• ½ cup vegetable oil
• 1 cup hot water
• 1 teaspoon instant coffee (optional, enhances flavor)

🤍 For the Cream
• 200 g cream cheese or labneh
• 200 ml liquid cream (cold)
• 1 cup powdered sugar
• 1 packet vanilla

🍫 Ganache (For the Top – Optional)
• 200 g dark chocolate
• 200 ml cream



👩‍🍳 Preparation

🟤 Cake

1️⃣ Preheat the oven to 170°C. Grease the pan.
2️⃣ Mix the flour, cocoa, baking powder, vanilla, and salt.
3️⃣ In a separate bowl, beat the eggs and sugar. Add the milk and oil.
4️⃣ Add the dry ingredients and mix.
5️⃣ Finally, slowly add the hot water. The mixture will be runny.
6️⃣ Pour into the pan and bake for 40–45 minutes. Check with a toothpick.
7️⃣ Leave to cool.

🤍 Cream

1️⃣ Whip the cold cream until fluffy.
2️⃣ Add the cream cheese, powdered sugar, and vanilla.
3️⃣ Whip until smooth.

🍫 Ganache

1️⃣ Heat the cream (do not boil).
2️⃣ Pour over the chocolate and stir.



🎂 Assembly

1️⃣ Cut the cake in half horizontally.
2️⃣ Spread cream between the layers.
3️⃣ Cover the top and sides with cream.
4️⃣ Pour ganache over it if desired.
5️⃣ Refrigerate for 2 hours.



💡 Tip

✔️ For extra moisture, lightly soak the cake layers with milk or chocolate sauce.
✔️ The flavor improves even more if left to rest overnight 😍

🍫🍓🍰 Neapolitan Cake (Chocolate – Strawberry – Vanilla)

Cakes:
Three separate cakes are prepared: chocolate, strawberry, and vanilla.
Butter and sugar are creamed together, then eggs are added. Dry ingredients and liquids are added and mixed.
Bake at 170°C for 25–30 minutes and cool completely.

Fillings:
🍫 Chocolate mousse:
200 g melted dark chocolate + 1 cup whipped cream (folded in)

🤍 Vanilla cream:
1½ cups cream + ½ cup powdered sugar + vanilla (whipped)

Ganache:
150 g dark chocolate + ½ cup hot cream, mixed together.

Assembly:
Chocolate cake → chocolate mousse → strawberry cake → vanilla cream → vanilla cake
Chill in the refrigerator, pour ganache over it.
Garnish with strawberries and chocolate 🍓🍫

• Fresh lemon juice – ¼ cup (60 ml)
• Lemon zest – 1½ tablespoons
• Baking powder – 1½ teaspoons
• Salt – ¼ teaspoon
• Vanilla extract – 1 teaspoon

For lemon buttercream frosting
• Unsalted butter – 1 cup (226 g), softened
• Powdered sugar – 3–4 cups (360–480 g)
• Fresh lemon juice – 2–3 tablespoons
• Lemon zest – 1 tablespoon
• Vanilla extract – ½ teaspoon
• Milk or cream – 1–2 tablespoons (if needed)

Instructions

Preheat the oven to 170°C (340°F) and line a cupcake pan with paper liners.

Cream the butter and sugar together until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract, lemon juice, and lemon zest.

In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet mixture alternately with the milk, mixing gently until just combined. Do not overmix.

• 2 cups (250g) all-purpose flour
• ¾ cup (150g) sugar
• 2 tsp baking powder
• ½ tsp baking soda
• ½ tsp salt
• ½ cup (120ml) vegetable oil (or melted butter)
• 1 cup (240ml) milk
• 2 large eggs
• 2 tsp vanilla extract
• 1 cup chocolate chips (plus extra for topping)

Instructions
1. Preheat oven to 200°C (400°F). Line your muffin tray with paper cups.
2. Mix dry ingredients: In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3. Mix wet ingredients: In another bowl, combine oil, milk, eggs, and vanilla. Whisk well.
4. Combine: Pour the wet ingredients into the dry and mix gently.
• Do NOT overmix — lumps are okay.
5. Fold in chocolate chips.
6. Scoop batter into your muffin cups, filling them ¾ full. Add extra chocolate chips on top.
7. Bake for 5 minutes at 200°C, then reduce heat to 180°C (350°F) and continue baking for 12–15 minutes or until a toothpick comes out clean.
