Fall is one of my favorite times to grow broccoli here in the South, and there's a good reason for that.

Broccoli loves cooler weather.

Unlike spring, when temperatures are getting hotter, fall temperatures are moving in the right direction.

That means less heat stress and better conditions for developing those nice, compact broccoli heads.

Plus, as the weather cools down, we generally have fewer pest problems.

So if you're planning a fall garden, broccoli is definitely a vegetable worth growing.

🌱 Growing Collard Greens? Start With Seeds!

Fall is one of my favorite times to grow collard greens here in the Southeast! And one of the easiest ways to get started is by planting seeds in seed-starting trays.

Starting collards in trays gives you more control over germination and allows your seedlings to develop strong roots before moving them into the garden.

Here's how I do it! 👇

1️⃣ Prepare Your Seed Trays

Fill your seed trays with a quality seed-starting mix.

2️⃣ Plant Your Seeds

Make a small hole about ¼ to ½ inch deep in each cell. Drop 1–2 collard green seeds into each hole, cover lightly with soil, and gently press the surface.

3️⃣ Water Gently

Use a gentle spray or bottom-water your trays to avoid washing the seeds out of place. Keep the soil consistently moist during germination.

4️⃣ Give Them the Right Conditions

Collard seeds germinate best in temperatures around 70–75°F, although they can sprout outside that range. You should start seeing seedlings in approximately 5–10 days under favorable conditions!

Once they sprout, make sure they receive plenty of bright light to prevent weak, leggy seedlings.

5️⃣ Thin Your Seedlings

If both seeds germinate, snip the weaker seedling at soil level, leaving one healthy plant per cell.

6️⃣ Get Ready to Transplant

Once your seedlings have developed 2–3 true leaves and a healthy root system, they're getting close to transplant time. Harden them off outdoors over about 7 days before moving them into your raised beds or containers.

Collard greens thrive in cooler temperatures, making them an excellent choice for fall gardens throughout the Southeast. They're also cold-hardy, and exposure to light frost can help improve their flavor.

Fall is a great time to grow carrots in the South! 🥕🌱

Carrots love the cooler temperatures of fall, making this one of the best seasons to plant them in Southern gardens. And if you’re a beginner gardener, carrots are a great crop to try because you can direct sow the seeds right into your raised bed or garden.

For better results, start with loose, well-draining soil, plant your carrot seeds about ¼ inch deep, and keep the soil consistently moist while you wait for them to germinate.

One of the biggest mistakes beginners make is letting the soil dry out during germination. Those tiny carrot seeds need steady moisture to get established.

Once the seedlings are a few inches tall, thin them so each carrot has enough room to develop a healthy root.

Fall is one of the best times to grow beets in the South! 🌱

Beets love cooler weather, making them a great crop for fall gardens across the Southeast. They’re also beginner-friendly, quick to grow, and you can harvest both the roots AND the greens.

If you’re planting beets in a raised bed, start with loose, well-draining soil, sow the seeds about ½ inch deep, and thin your seedlings to give those roots plenty of room to grow.

For beginner gardeners in Georgia and across the Southeast, fall is a great opportunity to keep your garden productive long after summer crops start winding down.

If you’re planning a fall vegetable garden in the South, broccoli, cauliflower, and collard greens are three cool-season crops worth growing.

This fall, I’m growing Green Magic broccoli, Twister cauliflower, and Georgia Southern collards in my garden.
