Labor Day on the Blackstone: My Ideal End-of-Summer Cookout Menu

Labor Day always feels like the unofficial closing chapter of summer cooking. Here in Texas, the weather may not have gotten the memo that summer is supposed to be ending, but the calendar is starting to turn toward fall, football, and a slightly different kind of outdoor cooking. So if I were planning a Labor Day Blackstone cookout, I would keep one thing in mind: …...

This breakfast hash is basically everything good piled onto the Blackstone at once. 🍳🔥

I started with crispy tater tots, sausage, and onion, then added jalapeños, crushed Fritos, and a drizzle of barbecue sauce to bring everything together. Once the hash was ready, I cracked an egg right on top and finished it under the basting dome so the whites could set while keeping that yolk soft and runny.

Crispy, cheesy, smoky, spicy, crunchy—and that runny egg turns into the sauce once you break into it.

Definitely not your average breakfast hash.

Crispy fish tacos are always a good idea. 🌮🐟🔥

For these, I went with beer-battered fried fish tucked into warm tortillas with crunchy slaw and a creamy sauce, then finished them with a little fresh garnish on top.

You get crispy fish, cool crunchy slaw, soft tortillas, and that creamy sauce all in the same bite.

These are definitely one of those meals where making “just a couple” tacos never really works out.

Freezer Food, but Make It Blackstone: Turning Convenience Foods Into Better Meals

There are nights when I want to cook something from scratch, take my time, and make every part of the meal myself. Then there are nights when I open the freezer and think, “What can I make out of this?” I do not think there is anything wrong with taking a shortcut. In fact, some of the easiest Blackstone meals I make start with something frozen or pre-made and then become much more interesting once I start adding fresh ingredients, sauces, toppings, or a little griddle creativity....

All the Big Mac flavor, just shrunk down into slider form. 🍔🍔🍔

These little guys have the familiar burger patties, cheese, lettuce, onion, pickles, and that Big Mac-style sauce—but built into sliders so you can make a whole batch at once.

They’re great for feeding a crowd, game day, parties, or for pretending that eating three small burgers is somehow different from eating one giant one.

That’s just math.

Detroit-style pizza in the Blackstone Pizza Oven? Yes, please. 🍕🔥

For this one, I’m going thick crust, crispy edges, lots of cheese, and all that classic Detroit-style goodness baked right in the Blackstone Pizza Oven.

The best part is that contrast: a soft, airy interior with those dark, caramelized, almost fried cheese edges around the outside.

This is definitely one of those pizzas where the crust is just as important as the toppings.

Taco salad night, but of course I had to get the Blackstone involved. 🌮🥗🔥

I griddled ground turkey with taco seasoning, then cooked the corn and black beans right alongside it before building everything over chopped romaine.

From there I loaded it up with shredded cheese, diced tomatoes, sour cream, crushed tortilla chips for a little crunch, and plenty of Catalina dressing—because as far as I’m concerned, no taco salad is complete without Catalina dressing.

It’s fresh, filling, a little crunchy, a little messy, and a great way to turn a simple griddle cook into a full meal.

Beyond Burgers: 5 Ways I Use My Blackstone That Surprise People

When people first think about cooking on a Blackstone, the usual suspects come to mind: smash burgers, bacon, pancakes, fried rice, and cheesesteaks. Those are all great reasons to own a griddle, but some of my favorite Blackstone cooks have come from figuring out how to use that big piece of hot steel in ways people do not necessarily expect....

I decided a regular Reuben apparently wasn’t enough work, so I smoked the meat myself first. 😂🔥

This was my take on a Reuben using smoked corned beef, chopped up and piled onto rye bread with plenty of sauerkraut, melted Swiss cheese, and dressing before everything came together into one big, messy sandwich.

The combination of smoky beef, tangy kraut, creamy dressing, melted cheese, and toasted rye is pretty hard to argue with.

Napkins are not optional.

Stromboli in the Blackstone Pizza Oven is hard to beat. 🍕🔥

For this one, I loaded the dough up with pepperoni, plenty of cheese, and all the good stuff, rolled it up, and baked it in the pizza oven until the outside was golden and crisp and the inside was hot, cheesy, and packed with flavor.

It’s basically everything you love about pizza, just rolled up into one ridiculously good package.

Slice it up, serve it with warm marinara for dipping, and watch it disappear.
