Welcome Chef Cate

Longtime friend and incredibly talented chef. We’re cooking, laughing, and of course, eating some delicious tiramisu together!

Ingredients: 5 large eggs separated; ¾ cup sugar (divided); 16 oz mascarpone ; 2 tsp vanilla; ¼ tsp salt; 2 cups cooled strong coffee/espresso ; ½ cup Kahlúa ; 24 ladyfingers ; 2 tbsp cocoa powder

Directions:
1. Whisk yolks + ½ cup sugar over a double boiler for 8–10 minutes, until thick and 160°F. Cool.
2. Beat in mascarpone, vanilla and salt until smooth.
3. Whip egg whites, gradually adding remaining ¼ cup sugar, until stiff peaks form. Gently fold into mascarpone mixture.
4. Mix cooled coffee + Kahlúa. Quickly dip ladyfingers 1 second per side.
5. Layer half the ladyfingers in a 9×13 dish, spread with half the cream, then repeat.
6. Cover and refrigerate at least 6 hours or overnight.
7. Dust with cocoa and shaved chocolate before serving.

Dirty Dr Pepper Sprinkle Cupcakes

Ingredients
• 1 box Devil’s Food Cake Mix
• 1 can (12 oz) Dr Pepper & Cream Soda
• 1 container vanilla frosting
• ¼ tsp vanilla extract
• LOTS of sprinkles ✨

Directions

1. Mix the dry cake mix with the entire can of Dr Pepper & Cream Soda. No eggs, oil or water!
2. Divide into lined muffin cups, filling each about ⅔ full.
3. Bake according to the cupcake directions on the cake mix box, until a toothpick comes out clean.
4. Let cool completely.
5. Add ¼ tsp vanilla to the frosting and whip with a hand mixer until light and fluffy.
6. Frost each cupcake generously.
7. Pour your sprinkles into a bowl. Turn the frosted cupcake upside down and gently press the entire frosted top into the sprinkles, rolling slightly so it’s completely coated.
8. Flip it over and admire that sprinkle-covered masterpiece!

OPERATION OUTBAKE JANET: WEEK TWO

My dessert of choice? Halloween S’Mores Crack using Wilton Cake Decorating sprinkles, blood glaze, and candy eyeballs.

S’MORES CRACK 🔥🍫

INGREDIENTS
• 18–22 graham cracker sheets
• 1½ cups salted butter
• 1½ cups dark brown sugar
• 1½ tsp vanilla
• 3 cups semisweet chocolate chips
• ¾–1 cup chopped milk chocolate
• 3 cups mini marshmallows
• 3–4 crushed graham cracker sheets
• Flaky sea salt

DIRECTIONS

1. Heat oven to 400°F. Line a 13×18-inch rimmed sheet pan with parchment.
2. Arrange graham crackers in a single layer, breaking as needed.
3. Boil butter and brown sugar for 3 minutes, stirring constantly. Remove from heat and stir in vanilla.
4. Pour over crackers and bake 5 minutes.
5. Sprinkle with chocolate chips. Let sit 2–3 minutes, then spread.
6. Add chopped milk chocolate and marshmallows. Broil 30–60 seconds, watching closely.
7. Top with crushed graham crackers and flaky salt.
8. Cool, refrigerate until firm, then lift out and break into pieces.
