Eggs Benedict with Smoked Salmon

:

* 2 English muffins, split and toasted
* 4 large eggs
* 4 slices smoked salmon
* 2 tablespoons white vinegar
* 2 tablespoons chopped fresh chives
* Fresh cracked black pepper

For the Hollandaise Sauce:
* 3 egg yolks
* 1 tablespoon lemon juice
* ½ cup unsalted butter, melted
* Pinch of salt
* Pinch of paprika

Step 1. Fill a saucepan with water and bring to a gentle simmer. Add white vinegar. Crack each egg into a small bowl and carefully slide into the water. Poach for 3–4 minutes until whites are set and yolks remain soft. Remove with a slotted spoon.

Step 2. In a heatproof bowl over simmering water, whisk egg yolks and lemon juice until slightly thickened.

Step 3. Slowly drizzle in melted butter while whisking continuously until the sauce becomes smooth and creamy. Season with salt and paprika.

Step 4. Place toasted English muffin halves on serving plates. Layer smoked salmon over each half.

Step 5. Top each muffin with a poached egg.

Step 6. Spoon warm hollandaise sauce generously over the eggs.

Step 7. Garnish with chopped chives and freshly cracked black pepper before serving.

Garlic Bread

:

* 1 baguette or Italian bread
* 100 g unsalted butter, softened
* 6 cloves garlic, minced
* 1 tbsp fresh parsley, chopped
* 1 tsp salt
* 100 g grated Parmesan cheese (optional)

1. Preheat the oven to 200°C (400°F).
2. Slice the bread in half lengthwise.
3. Mix softened butter, minced garlic, chopped parsley, and salt in a small bowl.
4. Spread the garlic butter evenly over the cut sides of the bread.
5. Sprinkle Parmesan cheese on top if using.
6. Place bread on a baking sheet and bake for 10-12 minutes until golden and crispy.

Baked Chicken Thighs and Rice

:

* 4–6 bone-in, skin-on chicken thighs
* 1 cup long-grain white rice
* 2 cups chicken broth
* 1 small onion, diced
* 2 cloves garlic, minced
* 1 tsp paprika
* 1/2 tsp dried thyme
* Salt and pepper
* 1 tbsp olive oil

Step 1. Preheat oven to 375°F (190°C).

Step 2. Season chicken thighs with salt, pepper, paprika, and thyme.

Step 3. In a large oven-safe dish, spread rice evenly. Add diced onion and garlic. Pour in chicken broth.

Step 4. Place seasoned chicken thighs on top of rice, skin-side up. Drizzle with olive oil.

Step 5. Cover tightly with foil and bake for 35 minutes.

Cheesy Garlic Shrimp Roll-Ups

:

- 1 can crescent roll dough or pizza dough
- 200g shrimp (peeled & chopped)
- 1 cup shredded mozzarella or cheddar cheese
- 3 garlic cloves (minced)
- 2 tbsp butter
- 1 tsp paprika
- Salt & black pepper
- Fresh parsley

:

Step 1. Melt butter in a skillet and sauté garlic until fragrant.

Step 2. Add shrimp, paprika, salt, and pepper, then cook until shrimp turns pink.

Step 3. Roll out dough and cut into triangles or rectangles.

Step 4. Add shrimp mixture and shredded cheese onto each piece.

Step 5. Roll up tightly and place on a baking tray.

Step 6. Brush tops with melted butter.

Step 7. Bake at 190°C (375°F) for 12–15 minutes until golden brown.

Ham and salami sandwich

:

• Turkey ham slices, 150 g
• Beef salami slices, 100 g
• Gouda cheese, 6 slices
• Rustic bread or sourdough, 2 large slices
• Butter or olive spread, 1 tbsp
• Lettuce leaves, 2–3
• Tomato, 3 slices
• Cucumber, 4 thin slices
• Dijon mustard, 1 tsp
• Mayonnaise, 1 tbsp
• Black pepper, a pinch

Step 1. Spread butter or olive spread on the bread slices.

Step 2. Layer turkey ham and beef salami evenly on one slice.

Step 3. Add gouda cheese, lettuce, tomato, and cucumber.

Step 4. Mix mayonnaise with Dijon mustard and spread on the top slice of bread.

Step 5. Sprinkle a pinch of black pepper before closing the sandwich.

* 2 onion, finely chopped
* 4 garlic cloves, minced
* 800 g canned crushed tomatoes
* 2 tbsp tomato paste
* 1 tsp dried oregano
* 1 tsp dried basil
* Salt and pepper to taste
* 300 g lasagna sheets
* 550 g ricotta cheese
* 2 egg
* 300 g shredded mozzarella cheese
* 100 g grated parmesan cheese
* Olive oil for sautéing

:

Step 1. Heat olive oil in a pan and sauté onion and garlic until fragrant.

Step 2. Add ground beef and cook until browned.

Step 3. Stir in tomato paste, crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 20 minutes.

Step 4. In a bowl, mix ricotta cheese with egg and a pinch of salt.

Step 5. Preheat oven to 180°C (350°F).

Step 6. Spread a thin layer of meat sauce in a baking dish.

Step 7. Add a layer of lasagna sheets, then spread ricotta mixture, meat sauce, and a sprinkle of mozzarella.

Puff Pastry Sausage Rolls

:

* 2 sheet puff pastry, thawed
* 550 g ground beef sausage meat
* 2 small onion, finely diced
* 4 garlic cloves, minced
* 1 tsp paprika
* 1 tsp dried parsley
* 1/2 tsp black pepper
* 1/2 tsp salt
* 1 egg, beaten
* 1 tbsp milk
* Sesame seeds or black seeds for topping (optional)

Step 1. Preheat oven to 200°C (400°F) and line a baking tray with parchment paper.

Step 2. In a bowl, combine sausage meat, onion, garlic, paprika, parsley, salt, and black pepper until well mixed.

Step 3. Roll out the puff pastry sheet and cut it lengthwise into 2 equal strips.

Step 4. Shape the sausage mixture into long logs and place them along the center of each pastry strip.

Step 5. Brush one edge of the pastry with beaten egg, then fold the pastry over the filling and seal tightly.

Homemade Potatoes au Gratin

* 1.5 kg potatoes, peeled and thinly sliced
* 350 ml heavy cream
* 250 ml whole milk
* 4 garlic cloves, minced
* 1 tsp salt
* ½ tsp black pepper
* ¼ tsp ground nutmeg
* 150 g Gruyère cheese, grated
* 50 g Parmesan cheese, grated
* 1 tbsp unsalted butter (for greasing)

Step 1. Preheat oven to 180°C (350°F). Lightly grease a baking dish with butter.

Step 2. In a saucepan, combine heavy cream, milk, garlic, salt, pepper, and nutmeg. Heat gently until warm, then remove from heat.

Step 3. Layer half the sliced potatoes in the prepared dish. Pour over half the cream mixture and sprinkle with half the cheeses.

Step 4. Add the remaining potato slices in an even layer, followed by the rest of the cream mixture and cheeses.

Step 5. Cover with foil and bake for 45 minutes. Remove foil and bake for another 20–25 minutes, until golden and bubbling.

Step 6. Let rest for 10 minutes before serving.
