BANANA CREAM CHEESE BREAD

Makes 8-10 servings

Ingredients:

For the Banana Bread:

1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 ripe bananas, mashed
½ cup sour cream
For the Cream Cheese Swirl:

8 ounces cream cheese, softened
¼ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
Instructions:

Preheat the Oven:

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
Prepare the Banana Bread Batter:

In a medium bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon. Set aside.
In a large mixing bowl, cream the softened butter and 1 cup granulated sugar until light and fluffy, about 2-3 minutes.
Beat in the eggs one at a time, then add the vanilla extract.
Mix in the mashed bananas and sour cream until well combined.
Gradually add the dry ingredient mixture to the banana mixture, stirring until just combined.
Prepare the Cream Cheese Swirl:

In a separate bowl, beat the softened cream cheese and ¼ cup granulated sugar until smooth and creamy.
Add the egg and vanilla extract, beating until fully incorporated.
Assemble the Bread:

Pour half of the banana bread batter into the prepared loaf pan, spreading it evenly.
Spoon dollops of the cream cheese mixture over the batter.
Pour the remaining banana bread batter on top of the cream cheese layer.
Using a knife or a skewer, gently swirl the cream cheese mixture into the banana bread batter to create a marbled effect.
Bake the Bread:

Place the loaf pan in the preheated oven and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
If the top starts to brown too quickly, loosely cover the bread with aluminum foil.
Cool and Serve:

Remove the bread from the oven and let it cool in the pan for about 10 minutes.
Transfer the bread to a wire rack to cool completely before slicing.

🍗 Garlic Butter Chicken Foil Packets 🧄🧈🥦
Ingredients:

4 boneless, skinless chicken breasts

2 cups baby potatoes, halved

1 cup baby carrots

1 cup broccoli florets

4 tbsp unsalted butter, melted

4 cloves garlic, minced

1 tsp dried thyme

Salt and pepper to taste

1 tbsp olive oil

Fresh parsley, chopped (optional)

Aluminum foil

Directions:

Preheat grill or oven to 400°F (200°C).

In a large bowl, combine potatoes, carrots, broccoli, olive oil, half of the melted butter, garlic, thyme, salt, and pepper. Toss to coat evenly.

Tear off four large sheets of aluminum foil. Place one chicken breast on each sheet.

Divide the vegetable mixture evenly among the foil sheets, placing it around the chicken.

Drizzle remaining melted butter over each packet.

Fold foil over the chicken and vegetables and seal tightly to form packets.

Place packets on the grill or baking sheet and cook for 25-30 minutes, turning once halfway through, until chicken is cooked through and vegetables are tender.

Carefully open packets (steam will be hot), garnish with fresh parsley if desired, and serve.

Ingredients

2 delicata squash (≈900 g / 2 lb)

2 tbsp olive oil

¾ tsp fine sea salt + ¼ tsp black pepper

Garlic butter

3 tbsp unsalted butter

2 garlic cloves, very finely minced

Parmesan gremolata

½ cup flat-leaf parsley, finely chopped

Zest of 1 lemon

⅓ cup finely grated Parmesan (about 30 g)

1 tbsp olive oil

Pinch red chili flakes (optional)

Directions

Prep & roast: Heat oven to 220°C/425°F. Scrub squash, halve lengthwise, scoop seeds, and slice into 1 cm (½ in) rings. Toss with 2 tbsp olive oil, salt, and pepper. Spread on a large sheet pan and roast 18–22 min, flipping once, until golden with crisp edges.

Garlic butter: In a small pan, melt butter over medium heat. Add garlic; cook 45–60 sec until fragrant (not browned).

Gremolata: In a bowl, mix parsley, lemon zest, Parmesan, 1 tbsp olive oil, and chili flakes.

Finish: Transfer hot delicata to a serving bowl, drizzle with garlic butter, and toss. Shower with gremolata and serve immediately.

500 g ground beef (or beef/pork mix, 1 lb)

½ cup breadcrumbs

1 egg

2 garlic cloves, minced

1 tbsp fresh parsley, chopped

½ tsp salt + ¼ tsp black pepper

Sauce

2 tbsp unsalted butter

3 garlic cloves, minced

1 cup cranberry sauce (store-bought or homemade)

¼ cup orange juice

1 tbsp honey or maple syrup

½ tsp chili flakes (optional)

Zest of ½ orange

Directions

Preheat oven to 200°C/400°F. Mix meatball ingredients, form 20 small balls. Place on parchment-lined tray, bake 15–18 min until cooked.

In skillet, melt butter until silky. Add garlic; cook 1 min. Stir in cranberry sauce, orange juice, honey, chili flakes, and zest. Simmer 5 min until glossy.

Toss cooked meatballs in sauce until coated.

Serve hot, garnished with parsley or extra zest.

Ingredients

300 g fresh pappardelle pasta (10 oz)

25 g dried porcini mushrooms (1 oz), soaked in 1 cup hot water

2 tbsp olive oil

3 tbsp unsalted butter

3 garlic cloves, minced

200 g cremini or chestnut mushrooms, sliced

1 tbsp fresh parsley, chopped

½ tsp salt + black pepper

30 g Parmesan cheese, grated (¼ cup)

Rosemary crumbs

1 tbsp butter

½ cup fresh breadcrumbs

1 tsp fresh rosemary, finely chopped

Directions

Soak porcini mushrooms 20 min. Drain (reserve liquid), chop.

Cook pasta in salted water until al dente. Reserve ½ cup cooking water.

In skillet, melt butter + oil. Sauté garlic 1 min, add cremini + porcini. Cook 6–7 min until tender. Add a splash of porcini liquid.

Toss in pasta, parsley, Parmesan, and reserved water until silky.

For crumbs: melt butter, add breadcrumbs + rosemary. Toast until golden.

Plate pasta, sprinkle rosemary crumbs on top. Serve immediately.

2 tbsp olive oil

½ tsp salt

Chili-garlic butter cheese sauce

3 tbsp unsalted butter

2 garlic cloves, minced

½ tsp chili flakes (or 1 small fresh chili, finely chopped)

2 tbsp flour

1 ½ cups milk (360 ml)

1 cup cheddar cheese, shredded

½ cup Monterey Jack, shredded

Salt & pepper, to taste

Toppings (optional)

½ cup sour cream

½ cup salsa or pico de gallo

2 tbsp green onions, sliced

2 tbsp cilantro, chopped

1 jalapeño, sliced

Directions

Preheat oven to 220°C/425°F. Spread tots on a baking sheet, toss with olive oil and salt. Bake 25–30 min until golden and crispy.

Meanwhile, make sauce: melt butter in saucepan until lightly browned. Add garlic + chili; cook 1 min. Whisk in flour, then milk. Simmer until thickened.

Stir in cheeses until smooth and melty. Season with salt/pepper.

Transfer baked tots to a platter. Drizzle with chili-garlic butter cheese sauce. Add toppings as desired. Serve immediately.

Ingredients

4 bone-in, skin-on chicken thighs (≈1.2 lb / 550 g)

2 tbsp olive oil

3 tbsp unsalted butter

4 garlic cloves, minced

250 ml apple cider (1 cup)

120 ml chicken stock (½ cup)

1 tbsp Dijon mustard

1 tsp fresh thyme leaves

½ small Savoy cabbage, cored & shredded (≈400 g)

1 apple, thinly sliced

Salt & black pepper, to taste

Directions

Season chicken with salt and pepper. Heat oil in skillet, sear thighs skin-side down 6–7 min until golden. Flip, cook 3 min more. Remove and set aside.

Melt butter in the same pan. Add garlic; sauté 1 min. Stir in cider, stock, mustard, and thyme. Simmer 2 min.

Add cabbage and apple slices to skillet. Nestle chicken back in, skin-side up. Cover and simmer 20–25 min until chicken is fully cooked (75°C/165°F).

Uncover, spoon sauce over chicken, and serve hot with bread or mashed potatoes.

2 carrots, chopped

500 ml beef stock (2 cups)

250 ml red wine (1 cup)

2 sprigs thyme

Salt & pepper

Apple mostarda

2 tart apples, peeled & diced

2 tbsp sugar

2 tbsp white wine vinegar

1 tsp Dijon mustard

Pinch red pepper flakes

Sandwich assembly

8 slices rustic bread (sourdough or country loaf)

6 tbsp unsalted butter, softened

3 garlic cloves, minced

1 ½ cups shredded Gruyère or fontina cheese

1 ½ cups shredded sharp cheddar

Fresh parsley, chopped

Directions

Braised short ribs: Season ribs, sear in oil until browned. Add onion, carrots, garlic; sauté 5 min. Deglaze with wine, add stock + thyme. Cover and braise 2 ½–3 hrs at 160°C/325°F until fall-apart tender. Shred meat, discard bones.

Apple mostarda: Simmer apples with sugar, vinegar, mustard, and chili flakes 15–20 min until glossy and jam-like.

Garlic butter: Mix softened butter with minced garlic. Spread on bread slices.

Assemble: Layer shredded cheese, short ribs, spoonful of mostarda between bread. Grill in skillet until bread is crisp and cheese is melted.

Cut in halves, sprinkle parsley, and serve hot.

🍄 Chanterelle & leek toasts with hot garlic brown butter 🧄🥖

Ingredients

250 g chanterelle mushrooms, cleaned and halved (≈9 oz)

1 medium leek (white + light green parts), thinly sliced

2 tbsp olive oil

3 tbsp unsalted butter

3 garlic cloves, thinly sliced

4 thick slices country bread

2 tbsp fresh parsley, chopped

Salt & black pepper, to taste

1 tsp lemon juice

Directions

Toast bread slices until golden and crisp. Keep warm.

Heat olive oil in skillet. Add leeks, cook 3–4 min until softened. Add chanterelles, season with salt/pepper, cook 6–8 min until golden and tender. Add lemon juice, toss well.

In small pan, melt butter over medium heat. Cook 2–3 min until nutty brown. Add garlic slices; sizzle 1 min until fragrant and just golden.

Pile mushrooms and leeks onto toasts. Spoon hot garlic brown butter over the top. Garnish with parsley. Serve warm.
