1. Birria Quesadillas
Ingredients:
1 lb beef chuck, shredded
2 dried guajillo chiles
1 dried ancho chile
3 garlic cloves
1 tsp cumin
1 tsp oregano
1 tbsp vinegar
Salt & pepper
8 flour tortillas
2 cups mozzarella cheese
Cilantro & lime, for serving
Instructions:
In a pot, simmer beef with chiles, garlic, cumin, oregano, vinegar, salt, and pepper for 2–3 hours, until tender. Shred the beef. Dip tortillas in the birria broth, then fill with beef and cheese. Fold and press. Cook in a skillet over medium-high heat for 2–3 minutes per side, until golden and crispy. Serve with birria broth, cilantro, and lime.
2. Cheesy Beef Taco Skillet
Ingredients:
1 lb ground beef
1 packet taco seasoning
1 cup water
1 cup salsa
1 cup shredded cheddar cheese
1 cup cream cheese
½ cup sour cream
½ cup diced tomatoes
Green onions, for garnish
Instructions:
In a large skillet, cook beef until browned and drain excess fat. Add taco seasoning, water, and salsa. Simmer for 10 minutes. Stir in cream cheese and sour cream until melted and creamy. Top with shredded cheddar, tomatoes, and green onions. Cook until the cheese is melted and serve warm.
3. Chicken Taco Casserole
Ingredients:
2 cups cooked chicken, shredded
1 packet taco seasoning
1 cup salsa
1 cup sour cream
1 cup shredded cheddar cheese
1 cup black beans
1 cup corn
6 flour tortillas, torn
½ cup diced tomatoes
Green onions, for garnish
Instructions:
Preheat oven to 375°F (190°C). Mix chicken, taco seasoning, salsa, sour cream, beans, and corn. Layer half the tortillas in a baking dish, add the chicken mixture, then top with the remaining tortillas. Sprinkle with cheese and bake for 20–25 minutes, until bubbly. Garnish with tomatoes and green onions.
4. Street Corn Chicken Bowl
Ingredients:
2 chicken breasts, grilled and diced
2 cups cooked rice
1 cup corn, grilled or canned
½ cup mayonnaise
½ cup sour cream
1 tsp chili powder
1 tsp lime juice
½ cup cotija cheese
Fresh cilantro, for garnish
Lime wedges
Instructions:
Season and grill chicken, then slice into bite-sized pieces. Mix mayonnaise, sour cream, chili powder, lime juice, and a little salt. Add rice, corn, chicken, and sauce to bowls. Top with cotija cheese, cilantro, and a squeeze of lime. Serve and enjoy.
5. Loaded Chicken Nachos
Ingredients:
1 lb chicken, shredded
1 bag tortilla chips
1 cup shredded cheddar cheese
½ cup black beans
½ cup corn
¼ cup red onion
1 jalapeño, sliced
½ cup sour cream
½ cup salsa
Cilantro, for garnish
Instructions:
Preheat oven to 375°F (190°C). Spread tortilla chips on a baking sheet and top with chicken, beans, corn, red onion, jalapeño, and cheese. Bake for 10–12 minutes, until the cheese is melted. Add sour cream, salsa, and cilantro. Serve immediately.
6. Beef Enchilada Pasta
Ingredients:
1 lb ground beef
1 tbsp taco seasoning
1 cup enchilada sauce
3 cups cooked pasta
1 cup shredded cheddar cheese
½ cup sour cream
½ cup diced tomatoes
¼ cup green chilies
Cilantro, for garnish
Instructions:
Cook beef in a skillet and drain excess fat. Add taco seasoning, enchilada sauce, tomatoes, and green chilies. Simmer for 5 minutes. Stir in cooked pasta and sour cream until well combined. Top with cheese and bake at 375°F (190°C) for 15–20 minutes, until bubbly. Garnish with cilantro and serve.
