Sunday Lasagna (The Meal Prep MVP)
Classic, hearty, and feeds a crowd. Make it Sunday, and pop it in the freezer for a ready made meal on your busiest day of the week!
INGREDIENTS
• 12 pieces lasagna noodles
• 1 pounds ground beef
• 1 pounds Italian sausage
• 48 ounces jarred marinara sauce
• 32 ounces ricotta cheese
• 4 cups shredded mozzarella
• 1 cups grated parmesan
• 2 eggs
• 4 pieces garlic cloves, minced
• 2 teaspoons Italian seasoning
• 1 teaspoons salt
• 0.5 teaspoons black pepper
• 0.3 cups fresh parsley, chopped
STEPS
1. Brown the meat: In a large skillet over medium-high heat, brown 1 pounds ground beef and 1 pounds Italian sausage together, breaking it up as it cooks. Drain excess fat, then add 4 pieces garlic cloves, minced and cook 1 more minute until fragrant.
2. Make the meat sauce: Pour 48 ounces jarred marinara sauce into the skillet with the meat. Add 2 teaspoons Italian seasoning and stir to combine. Let it simmer on low while you prep everything else.
3. Cook the noodles: Boil 12 pieces lasagna noodles according to package directions until just al dente (they'll finish cooking in the oven). Drain and lay flat on a lightly oiled baking sheet so they don't stick.
4. Mix the ricotta filling: In a bowl, stir together 32 ounces ricotta cheese, 2 eggs, 1 cups grated parmesan (reserve a handful for topping), 1 teaspoons salt, 0.5 teaspoons black pepper, and 0.3 cups fresh parsley, chopped until smooth and creamy.
5. Layer it up: Preheat oven to 375°F. In a 9x13 baking dish, spread a thin layer of meat sauce on the bottom. Layer: noodles → ricotta mix → meat sauce → 4 cups shredded mozzarella. Repeat layers twice more, finishing with noodles, remaining sauce, and a generous blanket of mozzarella and reserved parmesan on top.
6. Bake covered: Cover tightly with foil and bake at 375°F for 45 minutes.
7. Bake uncovered & brown the top: Remove foil and bake another 15 minutes until the cheese is bubbly and golden. Try not to stare too long it's mesmerizing. 🧀
8. Rest before slicing: Let the lasagna rest for 15 minutes before cutting. This is not optional. We know it's hard. We believe in you. ⏳ This step is what gives you those clean, beautiful slices — perfect for portioning out your meal prep containers.
NOTES
**Meal Prep Tips 🗓️**
- Stores in the fridge for up to **5 days** tastes even better on day 2!
- Slice into individual portions, wrap tightly, and refrigerate or freeze.
- Freezes beautifully for up to **3 months**. Wrap individual slices in foil, then place in a zip bag.
- Reheat from frozen at 350°F covered for 45 min, or microwave a fridge portion for 2–3 minutes.
**Make it easier:** No-boil lasagna noodles work great just add ½ cup water to your sauce to compensate.
**Swap it:** Use ground turkey or go full veggie with sautéed zucchini, mushrooms, and spinach. Just as delicious, zero judgment. 🙌
